My issue with Sabat is that most of the time there is not a natural tone to his voice and general portrayals. With a natural tone one can feel the depth in tone Sabat gives Piccolo (despite epicly failing at capturing the merciless quality the Seiyuu and McNeil captured, though I feel McNeil could have done with a tad less raspy quality to his voice... and the Seiyuu sounded somewhat bland and languid in my ears, but turned in a great performance nontheless, as did McNeil). One can also feel the doddering, aged, pondering, and morbid tone he gives Kamisama (who I feel he's very good at voicing).
Even Sabat's Vegeta sounds great and world weary with a natural tone that doesn't have so much strain put into it, despite not capturing the fiery tones and generally high tone of Drummond or the more subtle take of Ryo Horikawa (still largely conveying the prideful tones of the character). But Sabat generally doesn't have a good vocal range, so it's easy to discern when he voices multiple characters. He's not an inherently deplorable voice actor, but there are better-choiced VAs.

I don't really dislike Sabat. But, he has one of those super-distinctive voices that you always seem to hear as the one character you remember them for most. Similar to Johnny Yong Bosch for me. No matter whose mouth Johnny's voice is coming out of, it always sounds like a Vash/Ichigo clone or some Power Ranger. And while I suppose Sabat has to be rather good at characterization since he does so many characters in the same show, when I hear his voice in other shows I just find it annoyingly, glaringly obvious that it's his voice. (Not to mention that after watching all the trailers for Dragonball "Remastered" his overly-dramatic announcer stereotype has really been grained into me.)
But then I guess that just comes from watching too many anime series to the point where you recognize many of the actors. When you can't stop thinking of a certain voice as belonging to a certain actor for every second that a character is talking, it can be quite distracting.
I used to like Sabat's Vegeta (mostly in the late Freeza to early Cell arcs of the non-'remastered' dub), but now I don't ever watch the English Dragonball so I don't get much exposure to him.
The only voices of Sabat's that I absolutely love are Major Armstrong in Fullmetal Alchemist and Kuwabara Kazuma in Yuu Yuu Hakusho. Those are some CLASSIC Funimation dubs for which I have little if any complaints.

I think that Sabat can be very good in some roles, and very bad in others. I have always liked his Vegeta (even though it's nothing compared to Drummond's) and his Kami-sama, but I (and I am a dub fan) have a hard time listening to his Piccolo without tearing the hair off my head. Especially in the Freeza saga when he fused with Nail (oh yes,I can win,I feel great). Sometimes, Sabat's voices make me enjoy the characters he is voicing, while other times Sabats voices make me question watching the dub at all and make me think that maybe I should finally watch the Japanese version everyone is so fond of.
