To be honest, I also agree with you that Goku and Gohan are annoying characters.

Come to think about it, the only two Dragon Ball characters I kind of like is Piccolo and Freeza.

Because I loved Dragon Ball to death at one point, so much so that a pretty big piece of me still does.

I'm pretty sure Yamcha, Tenshinhan, Krillin, and Piccolo Jr. went through similar changes. Three of them did so long before Vegeta even arrived on Earth for the first time. Vegeta isn't deep. He's just the last in a long line of characters that started out as rivals and/or bad guys who slowly changed their tune.

I actually love Gohan at all times except for the Cell Saga. I hate him then. His being terrified about fighting Nappa and Vegeta was understandable. But he seemed to have gotten over all of that on Namek, so he shouldn't be so whiny fighting Cell.

Also, he's just HANDED power-ups; throughout the whole story, but against Cell especially. He doesn't really earn them like everyone else does.

Let's take Super Saiyan as an example. Mirai Trunks has to find his mentor's dead body. Gohan just needs to imagine his dad getting killed during training.

But let's say you want to use the manga version of the Trunks special, where Mirai doesn't have to earn it that way. OK, how about this: Mirai trains for how many years? Gohan, meanwhile, with just one year in the RoSaT, gets catapulted from not even BEING a Super Saiyan, to being the most powerful one there is. Gohan is given more in one year than Mirai earns in several.

Let's look at Super Saiyan 2. Gohan is given it when an innocent whom he barely knows is killed. But Mirai gets enraged about the deaths of innocents he doesn't know almost on a daily basis, and no SS2 for him. Vegeta doesn't get it when his own SON, whom he's just realized he loves, is killed--and judging by his reaction, he should have.

At least when the Old Kaioshin powers him up to 'Mystic', there's a clear reason given. But we're never told why he should always be special among demi-Saiyans when it comes to these massive, unearned bursts of power, starting all the way back on Namek (fighting both second, then third form Freeza). Neither version of Trunks gets them, nor Goten. Just Gohan.

And that's what pisses me off.

Although to be fair with the exception of SSJ2 they really didn't do anything. Elder Namek "unleashing his potential" didn't help him much and Grand Kai's dance of the morons made him strong for about an episode or two before he was absorbed by Boo (and then I guess he promptly forgets all about his mystic training and goes to read about earthworms.)

Vegeta is just as deep as Gargamel is in The Smurfs.

Piccolo went through most changes. He went from an evil Demon into Gohan's second "father", and a protector for peace.

Vegeta is not the most realistic by far. Kuririn och Yamcha would be.
They all show fear and human characteristics, 'cause they are humans. Toriyama gave humans the most "normal" characteristics, whilst the Aliens seemed to get the most unusual or the strangest combinations.

I guess the Stockholm syndrome fits very well with Gohan's relation to Piccolo.
I was always astounded by how Gohan, after all that hard treatment, began to like Piccolo.
I would say that if he was a normal child, he may have started to like Piccolo first when he sacrificed himself.
Or maybe he was lonely. And Piccolo was the least scary thing in the wilderness.
