Which kinda doesn't make sense, seeing as ALL 5 of GT's themes were premade songs by Japanese artists, as opposed to DB and Z, where the openings/endings were made specifically for the show.
Please correct me if I'm wrong on this. I'm fairly certain GT takes a page from today's anime handbook and basically finds a song that sort of fits the tone of the series, and the animation company makes an animation to go with it.

Toei probably had a better legal department when GT was made, and wrote up the contracts to include home video releases. My understanding is it had to do with the materials that FUNimation got from Toei, rather than a real licencing issue. What I think is the only real licencing issue that would occur is if FUNimation tried to secure the track directly from the music licence holder in order to use the original track, since Toei didn't supply it. I know reportly Toei made a couple revisions to the film masters that they had sent out, so it could be just simply the case of FUNimation being "unlucky" to what they got with Dragon Ball.
This explains why some insert songs were left intact, while others weren't (I think only two were left in the dub as a result...? Someone correct me if I'm wrong).
Dragon Ball GT's case is a little different, because Toei had sent FUNimation (and pretty much every other company) the proper material to work with. The only issue really being with the material is the lack of a full stereo audio track with the Japanese audio, which even the Dragon Box GT release is missing (but the reairings on Animax are broadcasted in Stereo...).

I planned to hold out on this set until FUNI announced a DB Dragon Box, but I could not resist. I have not watched DB since it aired on Toonami, and it just feels like I'm reliving my childhood again. I love the nostalgia!
Also, when I purchased this I saw all of FUNI'S original releases of DB used back on the shelves. They were $21 a piece. I wanted to buy them, but they will soon be worthless, I hope. I'm confident FUNI will complete these releases, and I prey for a DB Dragon Box just to have all the episodes in one set and not five or six.

I wonder...if these sets were in widescreen and cropped out the same amount of footage that you're losing from the zooming, would people hate it?

While cropping to widescreen effectively does the same thing, it takes away perfectly good footage with it.
The goal of a quality home release is to come as close to the intended 'vision' that the people making the show or film had.
I can tolerate many things in a release, I won't tolerate center cut cropping.
It's a competent release done with the masters they have available, and is what was expected. Which is what most reasonable people ask for and want. Would I care for any of the dozen little issues to be fixed? Absolutely, and if they are, these sets would go up on the shelf, to likely never be seen by me again. The difference between a product done as well as possible with the available materials (and market styling) and something done in a silly, stupid, unacceptable manner, is that even if something better comes out later, these WILL be on my shelf. I can't say the same for the orange bricks, which I didn't care to purchase past set 1 out of curiosity.
The 'largest' issue that could be argued with these sets based on Funi's material is that they didn't use dual angles for the titlecards. And here's the thing. Funimation was never good with dual angles so they dropped them because having them caused issues with the video in episodes. And I'll take the much better video we've gotten since they dropped them over being able to click angle and see a static screen of Japanese text any day of the week.

I was at Wal-Mart earlier today, not a sight of Dragonball Season 1. Was it too damn popular that it sold out in the first week? Or does that Wal-Mart just not get stocked that often? 
Next quest: Buy the Super: Broly and Super Hero Blurays, also Daima whenever that releases in the states. Also the Super Manga!

Walmart doesn't sell it in stores right now. I asked the FUNi rep on Twitter and she said she had a word with the guy in their retail dept.
