Mixed SciFi with mystic? Doesn't Dragonball itself do that?

Well, Dragon Ball started as a parody of Xiyouji, and it goes in a different name, and only one or two characters with the same names...

But Saiyuki is mainly an adaptation of Xiyouji with main characters named after the originals. It's supposed to follow the story as it was, but the monk is a bishounen with gun who wants to kill everyone every two seconds, Goku is a baby with huge appetite, Gojyu and Hakkai are opposite, AND GUAN YIN IS A DRAG QUEEN!!!

I don't want to turn this into a Dragon Ball vs Saiyuki, so... I'll stop here.

((But man, isn't there a manga or anime that follows the legend faithfully?))

I do believe that the trait comes from the character of Sun Wukong (Son Goku). I read that he has a huge appetite. Also, the reason why it is common for shonen action heroes (Luffy and Naruto for example) to have huge appetites is because of Dragon Ball. Most modern shonen fighting manga have a lot of character archetypes from Dragon Ball.

It occurs to me... while Son Wukong was at the banquet in heaven, didn't he eat... a lot...?
Part of which was immortality fruit. . . Several of them. But was that all?
