Saiyan's Fighting Obsession?

I've been contemplating the whole Saiyan motto that Vegeta is fond of spouting (typically just before having his ass handed to him), that Saiyans like nothing more than fighting, and that the more powerful the opponent, the more enjoyable the fight.

There's lots of evidence to support this creed; Goku vs. Vegeta, Freeza, Cell, etc. Even when the opponent is stronger than themselves, they still seem to enjoy the challenge.

So then, when does the opponents strength cause a Saiyan to go from excited to not so excited anymore? Considering Vegeta's reaction when faced with the over whelming strength of Freeza and Perfect Cell, he didn't seem too happy about his opponents being strong. So where is the line drawn?

I think Vegeta became frustrated at those points because he thought he had become the best. From the way I see it, it was no longer about the joy of fighting to him. He HAD to become THE BEST in the universe, because he had to prove to everyone he was stronger then Kakarot. When he fought Frieza and lost, he thought he had become a Super Saiya-Jin and had surpassed Kakarot - but in reality, he hadn't. And with Cell, it was the same thing. After all the training he did, he still just wasn't good enough. Vegeta, the prince of all Saiya-Jins, whose 'birth right' was supposedly to be THE Super Saiya-Jin, was constantly being outclassed. The man had a pretty big ego, and it was seemingly easily bruised.

It's odd. Saiyans seem to get excited over the prospect of fighting an even more powerful opponent, yet there comes a point when even they realize they stand no chance. When Vegeta fought Freeza, he had been looking forward to fighting the tyrant since he was younger, and when the time finally came, it dawned on him that absolutely nothing could be done. The same with Cell, except with Cell he actually aided in his opponent's achieving overwhelming power.
I was voted "most unique" and "most likely to become the next existential thinker" in high school.

I suppose that, and this is escpecially for Vegeta, that they enjoy the thrill of the fight when they are able to more or less keep up. I mean when the opponent is stronger, but, when they fight with some strategy, they can still gain the upper hand. But when the opponent is mocking them (like Cell) or they are completely outlcassed (like with Frieza) they either start to fear for their life (with Frieza) or they become extremely frustrated (with Cell).

Goku, in that respect is different. He almost loves it if his opponent is stronger, but he never gives up. He mentions something to that effect, while fighting Kid Buu on Kaioushin Kai, just before Vegeta's speech about him. It's possible that Goku is more like the normal Saiya-jin in terms of fighting nature...a little different from Vegeta who had to be the best (refer to tealsmith's post :P). It's almost as though no-one enjoys a fight more than him. It's mainly that reason, why the Saiya-jin are the greatest warrior race in the universe.

Goku actually does give in when he knows he can't win, in the kid buu saga, when he does the genki dama, and buu starts pushing it back his way, he drop his arms and says that's it, it's over, Vegeta on the other hand thought he was something else in the Cell saga, the feel of being the first to surpass a Super Saiyan made him feel unstoppable and he wasn't.

Son Gohan...? Bleh, what a waste of a good character. He only fought when the Earth needed him, but once everything was good and dandy, he became a (for lack of better word, but even this is an understatement) wuss.

I guess because he was only half-Saiyan, he didn't have the urge to fight.
