Which unfinished fight would you most want to see the end of
A lot of fights went unfinished in the series, whether they were interrupted, stopped, ended by forfeit, etc.
Which would you most like to have seen finished?
For me, definitely Piccolo vs. #17. It was one of the most even fights in the series, and it's anyone's guess who would have won the fight. It was also Piccolo's last big fight, with him seeing little action for the rest of the series.

I've always wanted to see a victor in Goku and Vegeta's ongoing battle.
They battled on Earth, Vegeta left, technically Goku won. When Vegeta was controlled by Babidi and became Majin, he challenged Goku yet again, and damn that battle was intense. It was left unfinshed when Vegeta (the bastard that he is) knocks Goku out, steals the last Sensu, and goes to kill himself against Buu. Who won? Goku was rendered unconscious, Vegeta was nothing but a pile of dust after he blew himself up, so no real victor.
They *could have* had a re-match in GT, but the fate of the Planet was at risk, thanks to the Shadow Dragons. And they decided to fuse twice, and after the second, Vegeta would never become SSJ4 never again. (In the series, at least)

'Cause I specifically remember Goku getting his ass handed to him by Vegeta, who was much more powerful. He needed to help of Gohan, Kuririn and Yajirobe just to stay alive.
Once Vegeta transformed into an Oozaru, that fight was over.
As for unfinished bouts, I'd like to have seen the ending of Piccolo and #17's fight. I always wanted to know if Piccolo was smart enough to find a way around the whole "unlimited energy" situation.

He didn't consider it a loss either. Goku had his legs broken, and he used the last (tiny) bit of Energy shooting Vegeta in the eye. Goku was done.
I suppose technically, it was unfinished, but "technically" would have just been Vegeta putting a Fatality on Goku, as nothing else was left to be done.
He beat Goku. He didn't kill him sure, but he owned the hell out of him. That fight was over to me as soon as Vegeta was standing over Goku, mocking his mangled body.
If that isn't winning, I dunno what is.

Son Vs. Majin Vegeta.
That fight was spectacular, even more so in the Anime. I REALLY would have loved to see what it would have been like if Son weren't worried about Boo the whole time.

Raging Blast would have been a perfect chance to do an OVA of Super Saiyan Gokû versus SSj3 Vegeta to settle things once and for all.

I'd have to vote for Goku and Vegeta too. The SSJ2 battle. Always wished it was longer.
However, one hardly needs to dwell on what the outcome would have been had they been able to continue.
Had Vegeta started to gain the upper hand, Goku would have been forced to reveal his SSJ3 form thus ending this battle is a quick manner.
Still, it would have been awesome to see, not to mention that Vegeta's initial reaction would have been priceless.

I would have liked to have seen the conclusion of Piccolo and #17's fight. It would be nice to see Piccolo trying to work his way around the whole "17-not-losing-any-energy" situation.
Sticking with Piccolo, I would've also liked to see the Big Green actually fight Kaiôshin. Not only would it have put an end to those age-old "Was Kaiôshin stronger than Piccolo?" arguments, but it would be good to see how Piccolo's intelligence and strength would do against Kaiôshin's psychic abilities.
And I also give my vote for SSJ2 Goku vs. Majin Vegeta. The two were so evenly matched, it would be interesting to see the conclusion, if any. And it would be nice to see the full 28th Tenka'ichi Budokai battles after Goku and Oob left.

It seems like that Toriyama dislikes even matches and refrains from ending them.

The only all out even battle I can think of is Goku vs. Piccolo, and even then it seemed that Goku was a bit stronger than Piccolo. But I guess it added to the suspense, which is why it made that fight the most epic and loveable fight of all.

What we know is Goku used everything he had in his Kaio-ken x3 and x4 to the point to where he was so sore, he couldn't move. Vegeta didn't know that though. Vegeta saw a man out match him in physical combat and ki mainpulation, to where the only way he could win was by cheating; IE transforming into an oozaru when he knows Goku can't. It tipped the scales way too far and Vegeta was embarassed he had to turn to that option. If I remember right, he complained about it for a bit before he flew back down to Goku, but he was so obsessed with beating Goku that he didn't care at the time.
So yeah, Vegeta won because he broke Goku's body in every way, but he's embarassed by what he had to do in order to do it so he seems to consider it a loss and an eternal scar on his pride. From there, every time he sees Goku, he's always 1 step ahead of him.

I really wanted to see the fight with Goku v Vegeta AT THE TOURNAMENT as normal saiyans. (No SSJ and Majin)

I personally wouldn't want the first Gokū vs. Vegeta fight to be concluded, because then Vegeta would be killed. No Vegeta, means no Trunks.
