GameFAQs has some pretty good movelists. They're horribly outdated and use all sort of strange terminology, probably because some of them are older than the dub, but those should help you on your way.
Keep in mind that in the first SB, you can't charge up ki, you just have to hit the enemy to build it up a la Street Fighter's super meters.
Another trick in the first SB is that you can easily knock down the opponent with L+R for a cheap victory, because the AI usually won't escape from it unless you're playing at the hardest level. On the other hand, you need to play at the hardest level to finish properly (it's been years, but I believe it kicks you out after fighting #16 on lower levels.)

Super Butoden differs greatly from SB2 and SB3.
But ... yeah. Just hold L/R (which ever direction the opponent is in), and occasionally stop to block attacks. That's... pretty effective.
(Freeza and Vegeta are good at getting around this ... "strategy" though!)
SB2 and SB3 have in-game movelists, though finding them without reading the Japanese is a bit tricky. There's a hidden menu (pause -> select), and the movelists are in there somewhere (third from the bottom, I think?).
SB1 is a lot harder in terms of getting attacks to actually work. On the other hand, up-down-A is an easier "dodge this big attack" method than what we get in the later games.
(And until SB3, you can't fly unless you're at a distance from your opponent.)

Thanks for the help, guys! I just found out that Super Butōden 1 also has command list for characters. You press start, then select, then press left or right till you reach COMMAND HELP. This is why I needed the instruction booklet, but thanks to you guys, now I don't! You are the hero guys! lol
One question though... How does dashing with L or R knock down the opponent? I can't seem to knock them down; I just move back and forth...

Super Butoden (1) is the only game in the trilogy where you can knock people down by charging them. They can hit you while you're rushing at them, though... but usually they don't.
(The L/R buttons, not left/right... though I get the impression that isn't the problem you're having. XD )
In SB3, if two characters charge at one another, they'll lock hands and you can perform a special throw (down+forward, up+back Y ). This is the first place I saw Goku's standard "swing 'em around" throw. XD
SB2 has no special dashing effects like that, though.

The dashing doesn't help me much; they're always defending, throwing energy balls, or flying into the air and going back and forth till I get sick of it and turn it off. I managed to get to No. 20, though.

Huh. It always worked for me. Had to stop every now and then to block, but then they're usually wide open. Although, it worked much better in an emulator than on the SNES. I don't know why... not savestates so much as the AI being more pathetic.
On the SNES, I was able to get to Gohan, I think only once. (#18 is good at murdering me). I ... want to think I got to Perfect Cell once, maybe? But... I'm probably wrong.
I was able to beat the ROM version with considerably less effort.
... I wants an SB3 storymode.
