I'm not talking about major things, like exclusive stories and such, I mean more minor details.
For example, I love that Future Gohan is able to use Makankosappo in some of the games... it's really neat seeing him in Goku's outfit doing Piccolo's move.
I love that if you fight Broly long enough in BT3's story, you switch to Full Power Roshi.... for no real reason.

It's not exactly video game exclusive, but I'll count it, because you actually fight.

I really like the colours chosen for Piccolo's attacks in Super Dragon Ball Z. It makes his attacks seem more demonic. I remember hearing somewhere that Toriyama was the one that chose the colours for the game somewhere but I'm not sure.

On that note, I also love that SSj4 Gogeta's alternate costume was a hideous, seemingly Dragon Ball AF fan-art inspired abomination.

Cell using the Genki Dama in Budokai 1-3 and other games. I think it's cool when he uses it and I don't care if people said that he was lying about using the attack. I think it's cool neverless.

Wasn't that supposed to be the inspiration?
Anway, Burter/Butta's super-speed combos in
Tenkaichi 2/3 despite that they're just as blockable as anyone else's.
Tenkaichi 2's Base post-RoSaT Trunk's rush attack being an infinite chain if you start with max power and have halo equipped.
Everyone but Piccolo basically having infinite stun in
Legacy of Goku II due to charged physical attacks.

I like that, in the Budokai games, when your character's equipped with Fusion or Potara, they sound like the Fusion character. And when they fuse, their signature move is the same as the starting character's one. For example, when Vegeta's equipped with Potara, he sounds like Vegetto, and when he fuses, Vegetto has the Galick Gun as his signature move. Oh, and Vegetto/Gogeta sounds like he says, "BALLS!" when he gets hit sometimes, which is always funny.
And the fact that Budokai 2's pretty much the only fighting game to give Tenshinhan the Volleyball Fist as his ultimate move.
I like the taunts in B3 too. It's just cool to do that in battle and lower your opponent's ki.

I've always liked when you matched up certain characters they would have unique pre-battle dialogue. They're cool little bits of fan service.

I love how in Budokai 3 and Infinite World, if you leave your character unmoved for about 10 minutes, he turns his head and stares at you.
Anybody else notice this?

I love how 18 says "TORA!" when attacking in most games.
She says it on Butoden when firing ki blasts; on Legends when using heavy attacks; I've also heard it in Tenkaichi 3 and Raging Blast 2 when she does certain attacks, normally she does it when it's a generic ki blast super, like when she throws a bunch of ki balls. On the later ones she normally says something like "TORATORATORATORA!!", if you pay close attention, you can actually hear her say it. I bet she says it in more games as well.
