Why were there 2 different DBZ logos? When they were used?

There are more than two. Each series has had multiple logos, though I think "Dragon Ball" has had the most since it can cover either the first anime series or the franchise as a whole.

I'm pretty sure there might be a few others from random products over the years, but I know for sure there is also one where the they fade from yellow to orange/red with a gradient throughout the whole logo.

GT isn't bad, just sucks ass in comparison to the other 2 animes.

It was the logo used for the Rock The Dragon intro and all of the Pioneer releases.

There are a couple more I can think of off the top of my head, like what appears to be FUNi's current "standard" logo for the original DB that they use on the blue bricks and video games:

Then there are the logos that Viz uses for the English tankobon...


There are a couple more you could throw in, like the VizBigs or kanzenban, but they're not really logos as much as "DragonBall" in bold typeface on the covers.
