Pilaf would be ruler of the Earth. Eventually Raditz would come and kill everybody and sell the planet. Dr. Gero would seek revenge and built his androids to go after Raditz and the rest of Freeza underlings. Majin Boo finally would be born, eventually would turn evil and represent a danger to the whole universe.

Trunks would come from the future and prevent Goku from being killed.

Trunks would have to come from a future in which Goku would still be dead even after prevented by Trunks, contradicting his existence in the first place. Ah, but i think we're still missing the bigger issue here! Pilaf < RR Army < Piccolo D < Raditz < Movie 3-4 villains < Freeza and his homies < Dr. Gero's scientific abilities (CELL!) < Majin Buu < Baby
Unless, Cell is smart enough to absorb enough living beings infinitely, where theoretically he could eventually be stronger than anyone else.
Unless that happens, then it's down to Buu.... if he or Cell can't destroy enough of the universe to kill off Baby before he's created, then Baby takes over. Ultimately it'd come down to those three in some way, and none of the movie villains could really take them down. (or if they did, maybe Brolly or Janemba would have some small shot)

Why would Baby take over? I am not as familiar with GT as I am with Z but baby would not be as powerful because there is noone powerful (like Vegeta) to take over, right?

Baby couldn't take over Majin Buu due to his internal structure but he might have more luck with Cell. (assuming Cell didn't just blow himself up.
In the end it seems like the world would be a struggle between those 3- Cell having to deal with Buu and the winner of that conflict having to survive Baby. (with Brolly as a dark horse candidate)
I'd put my money on Buu though.
It's also possible that the people on Namek may try something with their Dragon Balls once the universe got too screwed up for them to ignore. (you know, why didn't they just wish Majin Buu away anyway?)

How is everyone ignoring the fact that if Goku dies in episode 1 there is NO Cell? (or any of the later artificial humans that were created specifically to kill GOKU)

Gero created Cell to avenge himself and the RR Army.
Without Goku he'd simply target whoever else managed to beat it (Tenshinhan or Piccolo). Cell would probably be a lot weaker as a result though.

2. Unless a new version of Cell absorbs enough power...
3. Unless Brolly goes SSJ3 like in that one game... AND is able to avoid Majin possession....
4. Unless Baby survives long enough (no other bad guys conquer his planet) and is able to absorb a strong enough host....

if we assume Goku doesn't exist in the original adventure that does not stop Yamcha, Puar and Oolong from joining in with Bulma at some point - it would have been a much rougher battle but Pilaf may well yet still have been defeated (after all it was oolong who thwarted Pilaf's wish - not Goku).
But if we assume Pilaf's wish was granted he would have gotten his ASS kicked by General Red and the Red Ribbon Army not too long after that. So the status quo would be a red ribbon opression of the world. This would lead Pilaf to flee much as he did and as such lead him to turn to Piccolo Daimao. Who would dominate the hell out of everyone. The only chance anyone has is if Roshi doesn't fubar the Mafuba.
Assuming Daimao wins its an easy strech to say he gets wasted by Raditz who then erradicated the world - and then the world is sold by Freeza. Sometime later a Cell built by Gero for revenge on Daimao is released with the power to kill him and does so - he goes on to waste the world, awakening buu (Babidi is either not on the planet or hasn't devised his plan yet since dabura would have been significant protection to the powers around them) who wastes cell, and goes rampaging through space and finds his closest worthy opponent to be Freeza. Freeza loses, obviously. Kaioshin lacking any other alternative turns to a beaten mecha freeza and assists him and king cold in fighting Buu - this gives them a more vailiant force but it still falls far too short.
IF Roshi's mafuba works, Daimao is re-imprisoned and peace returns until Raditz arrives. Not finding any Kakarot around nor anyone else powerful enough to take note of he wipes the planet, planet is sold. This is followed by the new planets owners populating the planet, Daimao is accidentally released and wreaks havok before Cell is awoken and an epic battle between the two occurs (were this our cell the battle would be one sided, but lacking the insane DNA our cell had and being designed to kill Daimao instead of goku its a close fight). In the end, Daimao is the crazier of the two, though when he tries to make minions to help him they fight cell jrs of even power. It takes Freeza coming to the planet himself (after all he garantees his services to those who buy from him and unlike the last scenerio due to the epic battle there is time for him to be called since everyone hasn't been wiped yet). Freeza kills them both easily and effortlessly, however having Daimao's blood in him Cell reconstructs himself and fights back with freeza through many humiliating deaths until he is eventually wiped out utterly. Freeza leaves the planet, and the new inhabitants settle down. That is until Babidi unleashes his plan to revive Buu, without anyone really to stop him he does so cacklingly he goes on to try to conquer the universe with Buu, having a clash with Freeza that goes about as well as in the other scenerio for freeza, Babidi takes Buu as his weapon to become the ruler of the universe, Kaioshin lacking any other alternative turns to a beaten mecha freeza and assists him and king cold in fighting Babidi and Buu - this gives them a more vailiant force until Babidi majinizes Freeza and Cold. Kaioshin is brutally murdered and the universe is left in the hands of evil.
