Also, all ages rating means that its meant for everyone. +7 rating means that is meant for anyone older than 7. And so on. There's no rating like "only up to 18 years old" for a reason.

One argument people make is that if you watch something aimed at children, you're not challenging yourself. But that's bull.
A lot of things aimed at adults are poorly written, and some of it is just lowest common denominator trash (like nearly every reality show). But then there are works aimed at kids that are pretty intelligent. Star Wars: The Clone Wars is a political drama masquerading as an action show. Greg Weisman specifically writes his kids shows to try to appeal to all ages (and he does a pretty good job of it, I'd say).
But it goes both ways, because there are things for kids that are just silly nonsense, and there are things for adults that are very well written. If you really want to be "challenged," you'll miss out if you judge by age demographics alone.
Either way, entertainment is entertainment. Personally, I'm much more willing to admit I like Dragon Ball than some of the terrible adult shows I watch.

It's only for video games, but there used to be an ESRB rating which was "Kids - Adults," but it was changed to "Everyone."

Anyway, people my age (15 to 17) love both the Toy Story franchise and the first Lion King movie, so I don't see how Dragon Ball would be exempt from the norm whereas the previous do not.

"Fist of the North Star" absolutely was and still is a kid's show. It was published in the exact same magazine that Dragon Ball was published in (Weekly Shōnen Jump), which is the same magazine that things like Yu-Gi-Oh are published in.
Certain properties have transformed a little bit over time, though, and mostly because the audience grew up with it over such a long period of time. Properties like Fist of the North Star and Space Adventure Cobra are still shōnen (literally for "young boys") at heart (silly violence, basic story-telling, no truly deep themes beyond surface-level stuff, etc.), but the audience is older now, so the newer versions of those properties are evolving.
A more modern example might even be Rurouni Kenshin. The first part of the remake movie released this year really tries to "mature it up" a little bit (I'm thinking of one scene in particular), and I'd argue falls flat on its freakin' face because of that.
But yeah, all still celebrated as shows primarily produced for and aimed at young boys. See all of them included together in something like Jump Super Stars / Jump Ultimate Stars, despite some getting their own, independent games (see: Ken's Rage), too.

DBZ is still a kids show even if it has fighting and blood. The Gamera films from the 60's and early 70's had some pretty bloody moments but they were made and market for kids. Even if we ignore that Fist of the North Star is shonen, I'm not sure what your comment means. I agree. Why try to belittle what other people happen to enjoy. the people who don't enjoy it aren't obliged to watch it so what does it really matter to them? I can still enjoy many of the cartoon series I liked when I was a kid along with some of the more modern incarnations. I haven't actually heard anyone say stuff like this since middle school, or maybe my first year of high school. After that point people generally didn't seem to care about what kind of TV shows I watched (aside from the occasional 8th- or 9th-grader, but... they're 12/13 years old, you kind of expect them to still be morons about that kind of thing.) And even back when I did run into this kind of thing frequently, I never saw anyone complain about me watching DBZ; it was always Pokémon (...though I didn't even watch Pokémon anymore by that point, I just played the video games.)
Basically, the fear of being associated with anything that's "for kids" is the kind of thing that only young teenagers (and people who are still stuck thinking like them) do. It's yet another example of kids who are so obsessed with being "grown up" that they want to rush it and think that they need to throw away everything "kiddy" to do that. People in this age group (either actually or just mentally) seem to forget that TV shows, movies, and so on are rated with a minimum age (meaning "anyone this age or above can watch this"), not a maximum age; just because something is "for kids" doesn't mean nobody else can ever watch it.

What series would you guys consider to be the more 'adult' out of DB/Z and GT? I think GT is the most kid friendly, with Dragon Ball being more mature, and Z kind of in the middle?

*laughs sarcastingly* No. Just because there's stuff like Goku's "pat-pat" and Bulma being extremely sleazy doesn't mean it's automatically the most mature. It's obviously a little less serious and really gaggy for the most part (until you get to Piccolo). It was when Dragon Ball was in its infancy, and Toriyama was mostly known to be a gag manga artist with his work in Dr. Slump.
