The Spanish Dub
Funi released the first 3 episodes of the redub with the english, japanese, and spanish dub. Why didn't they continue on with the spanish dub being released with the other two on further discs?

Huh? Even Saiyan Invasion includes the Spanish track as an option, and it's the eighth volume in the "Ultimate Uncut" series. Unless you happen to mean why none of the episodes after the UUE episodes contain the Mexican-Spanish dub. If that's the case, then I can honestly answer that I have no idea. FUNi's completely odd when it comes to this stuff.
Our first taste was with Cooler's Revenge containing all three language tracks. We didn't get the Spanish dub on DVD again until Saiyan Showdown. Comparing the release dates, it took from 2002 to 2005 for FUNi to decide to give us the Spanish dub.
Although they further disappoint by making the rest of the movies available only in English and Japanese. My guess for why the UUE DVDs contain the Spanish dub is simply for the fact of giving us the illusion that this set is completely "uncut" in every way.
Though it doesn't explain Dead Zone's redub being slapped as a UUE DVD other than an excuse for marketing it, even though that one doesn't contain the Spanish dub.
