I wish Lunch didn't fall off the face of the earth when Z rolled around. I know realistically she has little to no impact on the story but it would've been nice to see her every now and then (and not just in anime filler).

Instead of just the saiyans and Kaioshin, I wish 18 had gone with them to Babidi's spaceship.

Speaking of characters that deserved, if not more, then better-Broly. Yeah. I wish I could have seen more of Broly's past... or him in his non-Super Saiyan forms interacting with people. I only find him credible in movie 8 as well. He was just "that villain" they had to beat after that.

No money, but I was thinking of vengeance for turning Kuririn to stone.
Although I do have gripes with the Buu arc, I love how Toriyama took Mr. Satan and made him sympathetic and paid off his popularity. Even though he got it through lying, some good should come of it. More of that is always good.

Yamcha, It’s quite sad to see how he became a "throw away" character in Dragon ball Z, he definitely deserved more.
I liked how his character was portrayed in Dragon Ball, it was his flaws that made him an interesting character and he also developed the Soukidan which is one of my favourite techniques from the series.
I also wish the rivalry between Yamcha and Tenshinhan was expanded upon.

Bio Broli had no reason to be made. He is was just Toei milking on a character that should have stay dead after DBZ Movie 8. I think Broli could have a better backstory since his reasons for hating Goku is stupid.

Offhand.
Tenshinhan- I just found him a very interesting character in the 22nd Budokai and Piccolo Daimao arcs. But after the 23rd Budokai he bascially fades away.
Yamucha- I wish Toriyama just at least let him win something. I liked him as a bandit.
Kaioshin- He started out so mysterious and intriguing.
Anything to develop the Artificial Humans. They were boring IMO.
(I didn't mind Bio-Broly- if only to play as him in a game

The humans. They were basically just chearleaders. Would have been nice if they created techniques more to combat stronger foes like the Kienzan and Kikoho.
Gohan deserved a better send off. His massive power boost amounts to nothing in the end and then Goku takes the opportunity away from him and Gotenks to finish off the task they were given.

For movie characters, I'm going to say Cooler. First of all, we never saw him interacting with Freeza in a flashback or something, so he ends up feeling like just another generic bad guy rather than Freeza's brother. Second, his movie was very short and he didn't have a lot of time to establish a character. Third and finally, the creators made him look like weaksauce in that film; if the whole point of him was "Freeza +1", you'd think that the execution would be obvious: Freeza beats base Goku, Cooler beats base Goku. Freeza beats kaio-ken x10 Goku, Cooler beats kaio-ken x10 Goku. Freeza deflects a x20 Kamehameha, Cooler tanks a x20 Kamehameha. Freeza gets beaten by Super Saiyan Goku... Cooler LOOKS like he's being beaten, but then reveals he has an ace up his sleeve in the form of a super special awesome extra transformation. Cue epic fight with Cooler in the comfortable lead and a beam struggle that ends up only killing Cooler because he hit the sun.
Instead it was: Freeza beats base Goku, Cooler gets his ass kicked by base/kaio-ken x10 Goku. Freeza loses to Super Saiyan Goku, Cooler transforms and still loses to Super Saiyan Goku. Booooooring.

I agree, her completely disappearing from the manga after being with the gang for so long always felt really strange to me. Especially when I found out her Z cameos are filler and the manga is only called Dragon Ball throughout, and even on top of that, Toriyama didn't even take time off between the 23rd Tenkaichi Budokai and the Saiyan arc. (Or at least I don't think he did. It couldn't have been substantial if so) It would have been nice to see her hanging around Kame house and, I feel, a missed opportunity for a nice callback cut away gag where both Roshi and Lunch are doing stretches/training or just sitting around in official Kame gear (lingerie). I also hated that they were in the crowd and didn't join the saiyan families, Kuririn, Muten Roshi, 18 and Marron, along with the One Piece and Toriko cast after the tournament in the crossover, it was just like GT...Only the saiyan familes got involved.
Humans aside, Gohan was nothing more than just fodder at the end, he had so much potential to be a hero but Toriyama killed him off at the Kid Buu saga...and made him into an extra...I also hated that Piccolo and Kuririn were shoved aside too.
By Mid-GT, even Trunks became a minor character...

I think the GT villains like Super 17 and the Shadow Dragons could have been written better. Super 17 was just a bigger and stronger version of #17 and his whole saga was pointless. Xi Xing Long is the final villain of the series and he comes out of nowhere. He feels like he was just there with no major build up and any backstory. Not to mention the wish that made him into his existence makes no sense since he was born from the wish when Mr. Popo to revive everyone on Namek. Having him born from the wish when Oolong wish for Panties would make more sense in my opinion.

Altough I agree with that the humans should have been included more and got their own time to shine, I see how it wouldn't be that easy.
First of all, we have the fan favorite Tenshinhan. I don't see him having that much character to build on. Although you could argue that him and Piccolo in the end have the same type of personality, Piccolo survived pretty much due to him being with Gohan, and being Goku's last "real" rival upon the start of the Saiyua-jin arc.
Don't get me wrong, though, Tenshinhan is a cool character with interesting techniques and still powerful in his own mind. It would be difficult to add him in the series without having Chao-zu being able to join the fights as well.
Yamcha in himself was unfortunately from the get-go a character used to show how strong he was, but that he still hadn't a chance against Goku-chan. His fight against Tenshinhan proved that.
And in the same way, in the 23rd Tenkaichi Budokai, Kuririn was later used like this as well, being shown fighting Piccolo and losing, and Tenshinhan fighting Goku and losing, and whoop, only Goku can defeat Piccolo.
Kuririn got some time to shine in the Namek arc, mostly due to him being pretty much responsible for Gohan, and held his own against Freeza's weaker warriors, and managed to stay alive against the Ginyu force.
Seeing how Kuririn, Piccolo, Gohan and Vegeta managed to have their moments in the Freeza Arc, I would say that it was the right way to go in the later arcs.
But then, Freeza was shown to be at least 100x their strength, so from there on out, the humans were thrown away.
I am one of those fans who would like to see the humans learning the Kaio-ken and further mastering it more than Goku did. Including so many strong characters in a single fight is actually able to work out, something we see in One Piece, where the bad guy has several henchmen and the characters are split into fighting the henchman at their level.
But alas, young boys like transformations, and since the dawn of the SSJ, any non Saiya-jin was thrown away.

I don't get how the Kaioken would work for the humans. I'm sorry but...Goku was 3,000,000 and the Kaioken x20 hurt his body. The highest I have the humans is 300,000 - 530,000. I don't see how they would master the kaioken with a power level like that. Not to mention for them to use a kaioken x50(SSJ multiplier and if the humans could handle that) their power would still be useless. Compare Goku 3,000,000 - 150 million to Humans being 15,000,000. They would still be useless. Maybe in the Boo Arc with Babidi henchmen. Which could work for the plot as Supreme Kai doubted the Z fighters.

See, I think Kuririn against Piccolo was actually a great moment with him. He put up a good fight and lost with style. I also disagree with the humans being made to be better at Kaio-ken just because.
Some character moments I would have changed:
Yamcha: Have him actually beat Goku, without the hunger excuse. Goku will pull ahead of him later with Roshi's training, and having him lose here will show that he still has room to improve. Also, he should defeat Mummy the way he almost did. Nothing made me hate kid Goku more than see him one-shot Mummy and make Yamcha look like complete shit.
Kuririn & Gohan: Their should have been some weaker Namek henchman that they could have had a proper fight against on Namek... like Appule or something.
Piccolo: Rather than being brought back just to job against Freeza, he should've been brought back earlier and defeated the Ginyu force in place of Goku (after fusing with Nail, of course). Then we could get the Piccolo vs Vegeta fight when Ginyu takes Piccolo's body.
Gohan, again: Should have had a proper fight with Cell, instead of pussying out. He also should have been the one to defeat Boo.
Mr. Satan: Actually, scratch what I said. Giving Satan a random stomach-ache was just a bad plot device to prevent him from killing Cell. Now people think he's actually weak, which is absurd. Even if it would be anti-climatic, he should have defeated Cell so this misconception didn't arise.

Piccolo: What Saiga said, and also let him beat 17 and have him lose to Cell mostly because Cell snuck up on him after he was tired out. That way Cell doesn't look so ridiculously mega-OP (he can still be stronger than Piccolo though) and 'Kamiccolo' would still have a good victory under his belt. It would also play up the tactical and sneaky nature of Imperfect Cell more. I would also have him at least put up a better fight against Nappa, if not beat him (seriously, we know Goku's awesome, we don't need to have him one-shot guys that pwn the entire rest of the cast every other episode to know that).
Super Buu: I hated that the strongest villain in Z just ended up as a punching bag. Instead of pulling Vegetto out of his ass, Toriyama could have had Goku and Vegeta do the fusion dance and form Gogeta, who proceeds to engage Ultimate Buu in a long and epic battle. While SS3 Gogeta takes the lead at first, he steadily starts to lose it due to Buu's infinite stamina, and is eventually beaten. Buu boasts, goes to absorb the weakened Gogeta, and everything looks lost... only for him to reveal that he can lolno that technique like Vegetto did. From there things will proceed more or less how they did.
Chiaotzu: I don't know, have him do ANYTHING.
In general: I'd like for team-ups to work more.

It would also play up the tactical and sneaky nature of Imperfect Cell more. I would also have him at least put up a better fight against Nappa, if not beat him (seriously, we know Goku's awesome, we don't need to have him one-shot guys that pwn the entire rest of the cast every other episode to know that).
Super Buu: I hated that the strongest villain in Z just ended up as a punching bag. Instead of pulling Vegetto out of his ass, Toriyama could have had Goku and Vegeta do the fusion dance and form Gogeta, who proceeds to engage Ultimate Buu in a long and epic battle. While SS3 Gogeta takes the lead at first, he steadily starts to lose it due to Buu's infinite stamina, and is eventually beaten. Buu boasts, goes to absorb the weakened Gogeta, and everything looks lost... only for him to reveal that he can lolno that technique like Vegetto did. From there things will proceed more or less how they did.
Chiaotzu: I don't know, have him do ANYTHING.
In general: I'd like for team-ups to work more.

Re: Characters who deserved more...
Oh yeah, I forgot to mention Piccolo beating 17. Although I kind of like that Piccolo can't beat 17 because of his infinite energy, since their strength is tied... but it's probably better for Piccolo's fusion to actually accomplish something.
