It isn't just the anime that says Cell could have had Trunks' cells, is it? I thought the manga said so as well.

Gero stopped personally monitoring them when they left for namek, but the spy robots that were gathering cells for Cell were still active.
And in the Manga, Cell tells Piccolo that they were going to add Trunks's cells, but decided not to because Cell had enough Saiyan cells.

I'm aware that it's a mistake. But I try coming up with my own explanations (there was a thread about people doing just that a while back) and was just mentioning that this is one I couldn't think of any explanation for.

Not really. Cell comes from the same kind of Timeline as Trunks, with the world ravaged by #17 and #18 and with pretty much all the gang dead. If in Cell's Timeline there was Trunks defeating Freeza, then his Timeline would be like the main Timeline, which doesn't make any sense.
To me its painfully clear that its just a mistake, that Cell comes from the same Timeline that Trunks comes from, only, without Cell's interference, Trunks had defeated the androids using the remote, and thus he wasn't much stronger, so Cell has able to kill him and travel back in time. And with Cell's added interference, things changed so that all of them became much stronger and thus Trunks no longer used the remote to defeat the androids in his timeline nor was he killed by Cell.
But Toriyama just made a mistake in that scene and forgot that it should have been Goku to defeat Freeza in Cell's timeline.

I am aware of that - I fully understand the mistake, but I'm talking about an in-universe explanation. Cell doesn't actually mention that Trunks killed Freeza and Cold. So it can work that he was talking about the Trunks in his timeline, who is identical to the Trunks that killed Freeza and Cold in the current timeline anyway. It just has the effect of Cell randomly bringing up Trunks when he isn't related, but it's better than having no explanation.

Wouldn't Cell technically, according to DBZ Movie 1, also have Garlic Jr.'s cells? And possibly other movie characters' as well, depending on how their appearances in the timeilne played out? (assuming Gero stole cells from the best up until Namek; or maybe demon cells are beyond science)

Does that mean the human fighters were used, or what? I guess at the very least he took cells from a grasshopper to create his form.

The fact that he uses Ten Shin Han or Krilin's attacks doesn't come from any cells from them, it is thanks to the "watching robot bug" who has been watching them for years since the Red Ribon army was destroyed, including at the Tenkaichi Budokai tournaments and during the Saiyans' invasion.

Not necessarily, Vegeta used the Kienzan in the battle on Earth, so he could have gotten it from there. Goku used the Taiyo-ken in the same battle.
