Gine could be named after the English word of Aubergine, another word for Eggplant. The Japanese name for eggplant is Nasu (茄子), but Aubergine rendered into Japanese could be Aberugine (アベルギネ).
As stated earlier, Gine could be a rearrangement of Negi (葱), which is Japanese for Spring Onion.
Toriyama has a perverted side to him, so my theory is that an additional reason she was named Gine is because the word Gine (ギネ) is the Japanese shorthand term for Gynecological, with “Gyne” referring to the vagina. For example, this Japanese gynecological website. She is the mother of Goku and the one who brings life to the savior of the universe through her “gine.”

Extremely unlikely. I'm sure that over 90% of the Japanese don't know the word aubergine, and cutting out a few roman alphabetical letters from such a word and reading it in the romaji way... For what it's worth too, I've never really bought into the 'Selypa is Goku's mom' thing. Hell, I always imagined her more with Toma, based solely on that one shot of them both laying there dead and smiling. And when THAT is more substantial evidence for a pairing than anything in there between her and Bardock...well, that just says how unlikely her being Goku's mom always was. It's also really cool to finally have a name (even if we're still waiting to see what she looked like). I want to say in my old Bardock based fanfic (that I've thankfully purged from the net now I believe), I had her name as...Cabba, or something. From Cabbage. Gine is much more original though, I like it.
