I don't know if his new origin is supposed to change anything about what he's meant to be but is he supposed to be a Demon? a Genie? an Alien? a previous God of Destruction?

Majin means evil, demonic entity/person. So Boo is a Demon. Or a Demon Genie as some want to call him.
And yes, Boo is an alien. Boo is not from Earth so Earthlings would call him an alien. Alienus = Stranger. So except your God of Destruction thought everything is right.
His new background, though canon, is weird though, as bringing destruction for a long time with no one doing anything/not being able to do something is weird. Boo, if as strong as in the final battle would have probably destroyed everythig quickly. What did the Kaioshin do? "Fine, Boo. You're a good boy. Now let's recreate the planets as we can't do anything against you until we fight you and one of our men who is almost as strong as you gets absorbed." And Beerus or ther others were not as good as the SSJ3-Kaioshin? Okay.

Considering Boo has clothes that you can say are remaniscant of the djinn's from arabic tales. He's an extremely powerful and apparently immortal Majin created in a freak accident by the wizard Bibidi. Parts of his design are stylistically Arabic, and the English Viz manga even calls him a djinn. Aside from the clothes, he also has transmutation magic and when he first appears he materializes from smoke.

I've actually seen some people say he is an "eternal force of nature" in light of the latest Toriyama interview, but I don't think that's quite what Toriyama said. He only said that Buu has existed for a very long time, but the question of his origin is still unanswered. He's not eternal or a force of nature or anything. Or at least that's not what Toriyama said explicitly.

Buu has existed since the beginning of time. To ask what Buu is is to ask what the universe is.
Also, it's probably apt to point out that in something like Dragon Ball, there is nothing exclusive about being a demon, an alien, a genie, or a God. Well, okay, the real Gods are born from trees, but then where did the trees come from? Once again, you've stepped into existentialist territory for a series that was largely made up on the fly, and continues to be made up on the fly as new information rolls out.
