Where did the new release dates for the chapters come from?

Where did the new release dates for the chapters come from?

Chapter 1 was changed from 3 December 1984 to 20 November 1984 for example.

I do believe Julian was "lucky" enough to go back and check all the actual Jump issue dates thanks to Pekindaq's collection.

What's the difference between the new and former lists? Was the former an official publication date, and the new list the dates that each Jump hit the store shelves?

Basically, yes. The dates previously used were the effective publication dates, which were the ones listed on the cover of the magazine. The dates we have now, thanks to several visits to the Osaka Prefectural Library, represent the official release dates as printed in the next-issue previews. (They were widely available the day before, on Mondays, by we've stuck to the official dates for consistency's sake.)
