Why are people acting like he would reveal some sort of mystery?

Literally everything about Akira Toriyama and his work on Dragonball has already been revealed in the various interviews he's had over the years. We know what he thinks of the characters, why he wrote sagas the way he did, why he changed things due to his editor, why he originally stopped, etc.

While some insight into Super's production would be interesting, its probably not much more than vague outlines. I mean what else could be asked?

What about after training with Whis ? We know Vegeta is strong enough to use it if power is all it requires but is that the case or is there a key to unlocking it that has nothing to do with strength ?

If I couldn't ask that for whatever reason then I'd ask him why he changed things up the way he did with the Saiyan arc. did it just happen and he didn't think much of it ? or was it meant to be like a soft reboot ? was it all his doing ? or was it because he got a new editor after the 23rd Tenkaichi and he wanted him to change things up a bit to bring in new readers ?

Vegeta most likely just achieved god ki and didn't even try to go SS3..
His mutated SS2 was stronger than goku, he dosen't even need that intensely draining form, it makes sense for him to not even care about it..
If he never tried it, he most likely can't do it..

The reason I ask them is because the other anime I watch (Naruto&One Piece) had major time skips but they didn't feel different from what came before them.

Even DB had time skips, one major one when Goku became an adult but like the above, they didn't make it seem like I watching a different show.

The time skip to Z on the other hand made it seem like one adventure ended, a completely new one began.

Not only did the overall focus of the story shift from adventures on earth to full combat in the universe but even the characters in the spotlight changed. in DB Goku was always the one and only character to be in the driver's seat while in Z he was mostly out of the picture in favore of other characters taking over.

Again, maybe it was just a coincidence and Toriyama didn't think about it but it seems too big of a change for it not to be intentional.

Dragon ball is 520 chapters, Dr.Slump is 238 chapters and it took him 15+ years to write them so I'd ask him how different DB would be if he spent all those years and chapters on it.

(laughs) At any rate, I had really only thought, “I’ll make a motif of Journey to the West, with a little bit of Kung-Fu thrown in.” I was prepared for it to end after 10 weeks if it wasn’t a hit.
