Why are people acting like he would reveal some sort of mystery?
Literally everything about Akira Toriyama and his work on Dragonball has already been revealed in the various interviews he's had over the years. We know what he thinks of the characters, why he wrote sagas the way he did, why he changed things due to his editor, why he originally stopped, etc.
While some insight into Super's production would be interesting, its probably not much more than vague outlines. I mean what else could be asked?

The Super behind-the-scenes stuff is interesting (even fascinating, as far as how curious I am about some of it), but it's all trivia. A number of people involved might be able to answer it.
I'd ask him open-endedly what his favorite self-authored series is, and hopefully get a bit of the "why." We've gotten a lot of the trivia, but never a lot of reflection.

If he could rewrite the story from the beginning of Dragonball without any editors being involved, what would be some of the major changes?
Genuinely I think that'd be interesting. We know the Android saga was plagued with executive meddling. I wonder what plans he had for that arc to unfold with Gero and 19 as the main antagonists for example.

If I talked to Akira Toriyama I would tell him that I'm a big fan of his work and thank him for all the entertainment that his work has given me. That's basically it. I wouldn't know what to ask him. Perhaps I would ask him if he's happy with how his work has turned out and why.

I'd ask him to reflect on one piece of artistic influence that was not obvious in any way (things like wuxia tales, American cinema... all the stuff we already know about), that he thinks no-one else would have been able to guess, and how it subtly affected or guided his writing of the series. Maybe it's not something that he even consciously thought about back during serialization, but reflecting on now, makes sense that it shaped him as Dragon Ball's author.
