Super Buu Compared to Fat Buu
Well this is entirely speculation, but I personally think that when Fat Buu was sealed away, the Dai Kaioshin and South Kaioshin became a part of Buu for so long, that they were completely digested and all that was left was the impact of their power and personality upon Buu.Onikage725 wrote: Buu himself couldn't be using South Kaioshin as a power source, if that's true, so his large form had to just be some kind of muscle memory.
When Fat Buu was yanked out, he naturally would have cycled through the previous forms until finally going back to the way he was so long ago.
My basic point is is that Kid Buu is the slate, and everything else was collected into what became Mr. Buu.

This is my opinion as to your question: I think that when Fat Buu had his internal conflict, that Kid Buu was too heavily ingrained into his being to just 'come out' all on his own.
What came out was the evil essense *within* Fat Buu, meaning any of the evil elements of the Kaioshins, plus Kid Buu's essence. Evil Buu wasn't Kid Buu, he was just the evil portion of Mr. Buu with Kid Buu's power.
My point is, that when Evil Buu and Mr. Buu combined to make Super Buu, he was a continuation of Fat Buu, and not some separate Buu altogether like Kid Buu was in terms of continuity.

That's just like the age old question, "Why didn't Evil Buu turn into Pure Evil Buu when Good Buu was ripped out?" The true answer to keep things simple has always been, "Toriyama just made it up as he went."
The way it seemed to work was, Evil Buu was basically the other Buu gone bad, so he was the same person. The reason he pleaded for Vegeta not to rip out the other Buu was because that's where who he is comes from, which is why he said "I won't be me, anymore!" Ripping him out was the same as if you ripped the Kaioshins out of Fat Buu. It's like it seperated the two, making one Buu the same as he was before dividing(which is why Vegeta insisted on killing him so he wouldn't risk giving rise to the evil Buu, again) and the other was Buu, and nothing but Buu, making him Pure Buu.
