Can somebody help me completing those new Parallel Quests? The first one Goku and Vegeta either die or their health is always below 50% and the second one is a fight against time, not even Supervillain Metal Cooler is doing the job.

I haven't played the game but I was watching a video on it so I have some things to say:
All of Future Gohan's lines when he fight's a certain character are pretty depressing.

GT Goku sounds horrendous. Is it the same one voicing kid Gohan?

Yes. That has always been the case, no matter the dub.
Colleen Clinkenbeard voiced kid Goku in the redub of the first Dragon Ball movie and voiced Kid Gohan in Kai. Personally, it sounds too much like her Luffy voice.

It sounds like Majin boo. I thought her Gohan was mediocre but this is plain bad.

I really liked Nadolny as GT Goku but Clinkenbeard sounds awful as him. Her Gohan is okay

Exactly my thoughts. I'll also add that I don't think Clinkenbeard works for Cell arc Gohan. Bearable, but not my preference.

That would be amazing if handled well just for the sake of something fresh. Towa and Mira are both dead so if there will be a XV3 there's gotta be someone new.

A lot of the story seems to highlight how tempted Trunks is to change time for the better. I can imagine 3 having him as an antagonist who finally fell for that temptation, thus causing the time patrol to fall apart (He is a pretty important member despite all jokes about him).

It is. Not a fan of Bobby Hill Gohan Nadonly. It's probably the funniest running gag in DBcember with every time Gohan came up they do a Nadonly/Hill impersonation.
