Now that Kai is over, What's going to happen to Daizenshuu EX?

Nothing is going to "happen". Daizenshuu EX was around long before Kai ever saw the light of day, and it will continue to exist for purposes of DragonBall-related news and content.
While I'm by no means an official representative, it's simple common sense. o.o

Now that we're no longer able to discuss new episodes of Kai the forum will die in approximately two weeks due to a lack of anything to talk about. It was fun while it lasted.
On a serious note, nothing will happen. There's no reason the end of Kai will affect this forum. Look at all the discussion that goes on daily about things other than Kai. Me, I didn't even care about Kai in the least in the first place and I doubt I'm the only one.

A bit worried about the lull in DB news (though I don't think the 2nd wave really ends unless we don't get any new video-games coming out at the end of the year like a Raging Blast 3) but I'm trying to turn it into something good personally; there's some big things I want to accomplish in RL this year and having a bit less on my plate in terms of new DB stuff isn't gonna hurt me.
I do still want my U.S. release of Ultimate Butoden though. I want to play that game so badly and I'm hoping it comes out here at some point this year.
Also, there's no saying that DB won't come back in the future with something far more impressive than Kai. Look at Rurouni Kenshin; that's coming back with an all new anime soon that may possibly include that final arc that never got animated the first time around.

I'm pretty sure people aren't going to stop being interested in the series because Kai is over. If anything, I wouldn't expect a big lull in activity until the North American releases are done. That includes the Dragon Boxes and Kai. Depending on what plans Funimation has for the movies and the other two anime series' Dragon Boxes, that may or may not be a long way off.
There was plenty of activity on this forum before Kai aired. But a lot of it was centered around the constant (and sometimes controversial) stream of new North American releases. Once those peter off, then we're headed into sort of uncharted territory.

You guys don't get it, Since we can't discuss anymore new episodes of Kai there won't be anything to talk about other then the FUNiboxes and whatever else in going on with Dragonball. Oh and by the way, What's your opinion on Toriko?

I started this website in January 1998. This is April 2011. If that isn't enough to end the conversation...
Your thought process on what there is to discuss seems to just abruptly end with "physical releases of a new version of the show in Japan", though you've at least granted yourself the extension of home releases in North America.
There's a world of other stuff, though. New guide books every couple years bring new information in the fold to discuss and pick apart "in-universe" explanations and back-history for various elements (things like the Kaioshin being born from golden apples). New video games give us game play to pick apart, new theme songs to compare and enjoy, new voice performances, and sometimes new characters or transformations.
Even if nothing new were to ever come out ever again (which is laughably unlikely), there are still a bazillion more things to discuss, not to mention new fans coming in that will want to discuss plenty that may have already made the rounds with older fans. Look at all the new content that we at Daizenshuu EX and Kanzentai produce month after month, year after year -- and that's just us usually working by ourselves. Toss those ideas out to the community, get other folks involved doing more research and brainstorming...
I mean, how is this even a question at all...? It seems really short-sighted, alarmist, and naive to believe that just because a rehashed version of a show happens to be over that suddenly there will never be anything to ever talk about ever again.
