Goku: I love his fight with Vegeta, but his fight with Cell is up there. It's a toss up between the two, but I'd say the fight with Vegeta is better if I'm including the entire fight.
Goten: His fight against Trunks, the only one he had.
Kuririn: I think it'd be his fight against Piccolo Junior. Did admirably well there.
Piccolo: Either his first fight with Goku, or the battle with Nappa for his sacrifice.
Tenshinhan: I don't really know. Maybe the battle with Nappa.
Trunks: Probably his battle against Freeza & Cold.
Vegeta: His battle with Goku.
Yajirobe: His very first battle.

Gohan: Cell. He really pushed him and made him a cut above the rest this fight.
Goku: Vegeta, hands down. I feel like he was more of to a challenge to Goku than Frieza.
Goten: Trunks

Tenshinhan: I enjoyed his fight with Master Roshi. It was more than physical. It was of the mind as well, trying to persuade and convince Tien to stop his douche ways.
Trunks: I don't really like much of Trunks fights.. In universe, probably Cell and his multiple attempts to kill the androids. In general I like his fight with Tien. I know it wasn't serious but I like it.

Chiaotzu: His fight with Kuririn. Only real fight he had outside of the Saiyan battle.
Gohan: His pummeling of Boo was a very satisfying and cool fight.
Gokuu: His fight with Piccolo at the 23rd Tenkaichi Budokai. The best throw down in the entire series.
Goten: Fight with Trunks. Derp.

Piccolo: Fight with #17.
Tenshinhan: The finals of the 22nd Tenkaichi Budokai was a great showcase of how awesome Tenshinhan is.
Trunks: If we're talking Mirai Trunks, then his battle with Cell (in the anime specifically) as a Grade 3 Super Saiyan was epic...though ultimately fruitless.
Vegeta: His fight against Gokuu & co. What a beatin' this dude took.
Yajirobe: With Gokuu, naturally.
Yamcha: With Tenshinhan at the 23rd Tenkaichi Budokai. Has some cool moments which is saying a lot for this unfortunate dolt.

Chiaotzu-Probably him blowing up against Nappa. The Krillin fight was funny, but everyone else is picking it, and I must be different!
Gohan-As a kid, his going berserk on 3rd form Freeza is my favorite. As an adult, the anime version of him vs. Buutenks.
Goku-The fight with Piccolo at the 23rd Budokai. Both fighters just kept pulling out new attacks and used everything they had.
Goten-The fight with Trunks, I guess. I try not to acknowledge Gotenks.
Krillin-Him distracting second form Freeza.
Piccolo-Same as Goku's.
Tien-None. I don't like the character.

It doesn't classify Tien- and Ti en (pretend that space isn't there) as the same word. The only time I actually manually type "Tenshinhan" is when doing power levels, so it doesn't look like:
