Can someone clarify this to me, but I was under the impression that yes, Kai did indeed remove most of the filler from the series, but could have sworn that there were some certain scenes on occasion that were actually in the manga that they removed to make it faster paced. Is this actually true that Kai removed a few manga scenes?

Very, very few that I know of.

Very few were removed I remember there was one page from the manga where Vegeta explains why Gohan was so strong it wasn't in Z or in Kai.

When Vegeta and Nappa leave whatever planet they were on when they found out Raditz died Vegeta explains to Nappa that a human Saiyan hybrid must produce a very strong offspring. Nappa says "A Super Saiyan eh?" and suggests that if they spawn a flock of them on earth they could build a new Saiyan empire, Vegeta quickly puts down the idea saying do you really want a bunch of brats running around with power levels higher than ours.
