Why does anime Bulma have green-blue hair?
It seems like such an odd choice because it's only on the artwork appearing between chapters #001-002. Every other piece of artwork released between chapters #003-064 shows her with purple hair. Why did the animation team go with the original colors even though Toriyama was consistently using purple?

Perhaps to make her stand out? Or they went with the first colour they saw and only started animating it. With this they couldn't change it. Sad because Bulma with Purple hair looks awesome in path to power

I doubt they started animating as early as chapter 2. It was obviously their choice given the time that had ellapsed since the beginning of the manga, maybe they thought it looked better?
They keep doing this even nowadays, changing colors likely because they think it's better than what the author chose: even the hair of Super Saiyan God were changed recently, when Toriyama's original artwork and comments make his vision of red hair pretty clear.
So Toei just change colors as they see fit because they decide it looks better.
The problem is also that they can't seem to take the risk to detach themselves from the colors they once chose, the only time they did that was with The Way to the Strongest, with Bulma's hair. Maybe they'll do it only in the case of a full remake with a fully new title (after all, the rest - GT, Battle of Gods, the movies - were supposed to be in continuity with the anime when it comes to style, so that wouldn't make sense to suddenly change some colors).

I wonder why they changed Vegeta's colors. Was it some sort of backlash from fans? Or did a director say "what the hell are those colors?! I know we can't change colors and it doesn't make sense, but we HAVE TO this time"?
They usually don't get back once they have decided on their own colors, so I wonder why it was changed to manga-friendly colors for this one time!

Maybe cause Vegeta original anime colour was ugly. Or they saw the mistake

Why the change, and why wait until they get to Earth for that change?

I really dislike Bulma with purple hair, so I'm glad they kept the colors from the first few chapters. I suppose the directors just felt it looked better (which it does, at least to my eyes). Both colors are equally ridiculous as hair colors, but at least the light blue has an aesthetically cool look. I alway associate the color purple with goofy stuff like Barney the Dinosaur.

Incidentally, that's exactly what Toriyama did with Battle of Gods. To him, Trunks naturally has the same hair color than Bulma (he essentially physically looks like a male reincarnation of Bulma). So when he tried to stick to the anime colors for the design, he just naturally considered Trunks obviously has blue hair too, which I find pretty funny!

Because of Bulma's light skin tone, the change from purple to teal, or teal to purple had no effect on her looks.

To be perfectly honest, I couldn't care less about the fans a re-issue might alienate because if all they're concerned about is being able to scalp the people who were either unaware of the Dragon Boxes or couldn't afford them at the time, they're just leeches and deserve to have their greed backfire on them.
