DBZ season Blu Ray Sets vs DBZ Kai vs DB Kai Buu saga
In terms of picture quality, bgm music, and value which product is better and why?

This comparison is weird because you listed Kai twice regardless that it was uncancelled, it still is just the continuation throughout the Majin Boo arc.
My pick's going for Dragon Ball Kai over FUNimation's Season BDs due to the better picture quality, music and uncropped, then for the Majin Boo arc of Kai while it may be cropped for the 'International Edition' though in this case I'd let it slip because Toei tried to refresh (new music, recasts, remastered) Dragon Ball rather than just what FUNimation does (crop the 80's show into 16x9 and pretend it's something modern).
My pick's going for Dragon Ball Kai over FUNimation's Season BDs due to the better picture quality, music and uncropped, then for the Majin Boo arc of Kai while it may be cropped for the 'International Edition' though in this case I'd let it slip because Toei tried to refresh (new music, recasts, remastered) Dragon Ball rather than just what FUNimation does (crop the 80's show into 16x9 and pretend it's something modern).

There is no "better", it all depends of what you want and like. The "season" sets are the only way to get the original (and complete) DBZ run on Blu-ray. Kai was initially released on Blu-ray on 8 volumes. This release has the original Yamamoto score, but certain volumes are out of print. Later, Kai was released on 4 volumes called "seasons" with the new score. Both releases are uncropped and uncensored, so no worries on that front.
The Buu arc of Kai hasn't been released on Blu-ray yet, but it's already known that the Japanese release will be cropped. Hopefully that won't be the case with the international version...

Dragon Ball Z Season Sets
Picture quality: Cropped. The colors are messed with too much for my taste, and I don't like it cropped.
Music: Never listened to Falconer's score, and Kikuchi is wonderful as always.
Value: Not much. In fact, I'm gonna say not much for all of them. Unless it's a dragon box, you aren't gonna get a lot of money for any of the releases.
Dragon Ball (Z) Kai Saiyan-Cell
Picture quality: Great. Not cropped, the colors have a sort of liveliness to them, just great overall.
Music: Yamamoto's score is great for the series, and Kikuchi's score doesn't fit with it, at least in my opinion.
Dragon Ball (Z) Kai: Buu
Picture quality: Cropped. An odd green tint is present, but I'd rather have this than the season sets.
Music: Not great. Generic, and sometimes it just doesn't fit at all. I haven't watched since Goku's rave revival, so this is just for the first few episodes.
