One thing I don't get is, why would Z Fighters have to fight against Kobi and his master, if their only goal is to have constant peace in the universe?

Also, why would Z Fighters want to catch up Goku and Vegeta (and it would be impossible)?
We also still don't know how powerful Gohan and Piccolo and everyone else will be at the end of z now that Super exists

I also would give Uub a primary role, and I would change the Super Saiyan form Kobi use and make it something a little better.
Personally, I would make It so that Kobi is the reincarnation of a Makaioshin (Zen'noshin's son?) and his earth wasn't purified at all because maybe the Grand Makaioshin was able to block the purification process or whatever excuse you want to use. So Kobi's Super Saiyan transformation could be a mix of Demon Ki (the opposite of a God) and Super Saiyan, making it exactly the opposite of Super Saiyan God/Blue. It should look exactly like Super Saiyan (more like it used to look on the first time of Goku vs Freeza, not overly detailed and not shiny yellow like it is now but more on the white/gold like on DBZ) but with a red/demoniac aura outline and red and black sparks

I'll do my best to answer your questions one by one.

1) The main issue with anyone gathering the Super Dragon Balls, especially the most powerful entity in the Demon Realm, is that the Z-Fighters have no idea what the person's actual motives may be, regardless of what that person says they want the Super Dragon Balls for. Plus, it would leave the Earth without their Dragon Balls, which isn't something the Z-Fighters are willing to risk. Finally, Kobi obtains the first few without asking, leading him to start the fights on his own.

2) None of the Z-Fighters come anywhere close to Goku/Vegeta level, like at all. I should have made it more clear. Reaching Goku/Vegeta's level of strength was the goal of all the Z-Fighters, but no one was able to actually do it. Gohan made a lot of progress especially considering his lack of a god form, but he's nowhere near as strong as his father or Vegeta. The main point of increasing their strength would be to establish that the other Z-Fighters aren't jokes anymore, so that when Kobi defeats them he actually feels threatening.

Anywho, for everything else you said, I doubt I'll make him the son of Zen'noshin because that seems incredibly Gary-Stuish. I like the groundwork I currently have for him, so I don't want to make any changes to him that are THAT drastic. As for Uub, yes! I definitely planned on including him. It'd be awesome to see the little guy in action.

Thoughts on Z Fighters, Training

At the point you're placing your fanfic, the series is late in the game. If Krillin is the strongest human in the series, he's still nowhere near First Form Freeza's power, and Tenshinhan's Kikoho is not going to do any damage to anyone stronger than Cell. Unless you're willing to break series norm and give human fighters a massive powerup, or alternatively, have them create a new technique that would give them an edge against stronger opponents i.e. Mafuba, and Kienzan, it would be best to just go over Gohan and Piccolo's training and leave everyone else's training in the background, with no extra mention or conversation about it.

The Original Super Saiyan and his motivations

So, why now is King Kai suddenly able to sense this guy, and why now is he coming out of the wood work? Why did the Grand Makai wait until now to decide he wants the Super Dragonballs, and above all, why are they going to Earth, where there are normal Dragonballs and no Super Dragonballs? Why is it that if this Super Saiyan has all this anguish and sadness and wants the universe to live in peace, whem he is he the antagonist? And why did he kill Shin-Jin's in the past? Shin-Jin's don't get involved for normal planetary disputes, if this Saiyan is such a person who wants peace, why is it that he's setting off alarms the like of which Buu used to set off? And then this selfless person is going to come to Earth, and obviously a fight is going to happen, though if he's as good as he's supposed to be, he could probably defuse any potential fight by talking.

There's talk of this Makaioshin saving him and giving him power, it doesn't sound like the Grand Makai took his free will, so really this guy is like two different characters. The bringer of Peace who will destroy planets to do so: Why? He wants to be Jesus, but will take out the other Gods who get in his way: Why? It just doesn't make sense.
