A comment on Reddit cracked open a dark corner of my brain and I remembered the old VizKids chapter books. I remember seeing one at my library and thinking it was a direct retelling of the manga as an easy-reader chapter book, but I honestly didn't look very hard. Does anyone remember these? Know the story behind them? Have they been discussed on Kanzenshuu before and you can just point me to the thread?
Digging into Gerard Jones, the "co-author", he seems to have written a number of kids comic book-type stories and a nonfiction book entitled, "Killing Monsters: Why Children Need Fantasy, Super Heroes, and Make-Believe Violence". (https://en.wikipedia.org/wiki/Gerard_Jones)

I bought one of them. I... wanna say I briefly talked about it on a podcast once? Can't quite remember.
Anyway, they're just really simplified versions of the story. Big print, written out like a kid's novel.

Gerard Jones was responsible for the original rewrite of Viz's manga. I'm assuming he really just received the credit as an honorary one here. If you're interested in learning more about the process Viz went through to translate the manga, I'd recommend checking out my podcast interview with Jason Thompson from a few months back.
