why is u7 the only team knocking off other universes it looks like an all verses one

It's hard to believe that all these characters from other universes (even if they were weak) couldn't eliminate each other.

This arc isn't so much a tournament arc as it is an extended fanservice showcase for all your favourite characters. They want to give the home team as many runs on the board and make everybody look as good as possible to justify bringing so many old hands back.

Because none of the other universes are developed so no one would care if 2 of them fought each other. That wouldn't have been an issue if this tournament came later down the line after more universes were introduced.

Because U7 has 5 God Tier characters with 3 being GoD candidate level in Goku, Vegeta, and Frieza. The only other universes that come close are U6 with Hit and Kefla, and U11 with Jiren, Toppo, and Dyspo. U11 is able to compensate for that by having a character beyond a GoD in addition to a GoD candidate level fighter and a God Tier character. Without Jiren, U7 would have trashed everyone. Even if Goku didn't get UI, the 5 of them together would have been able to beat Kefla, Hit, Anilaza, Toppo, and Dyspo (especially if they used Vegito). Jiren makes all the difference.

Realistically? Not only would it be a continuity nightmare but also it probably wouldn't be worth it. Imagine trying to keep track of where 80 characters are and what they're doing at any given time. There's just not enough time in a 24-minute episode for something like that. Also, think about it, do you really want to see a nobody from U10 fight someone from say, U3 for a half of an episode? Maybe that's your cup of tea but I feel like most people probably wouldn't be interested in it judging by how people have been reacting to characters like Ribrianne, Caulifla, Kale, etc. who already getting a lot of the spotlight.

With that said, I do think it would have been nice if we could have seen small 5-10 second montages of various fights between different characters at the beginning or end of each episode.

Even that arc had some bad writing. So, let's not go around saying that other series have done the TOP better than Super. That's something I read on Reddit or YouTube comments.
