What Kind Of Training/Adventures Should Goku & Oob Go Through??
GT simply had Goku train Oob on Earth for 5 years with no real indication that they ever went anywhere else. Now that DBS has added so many more places to journey towards and challenges to overcome, just where could Goku take Oob and what kind of training could he instill into the kid along the way?

I would like to cut ahead to right to the NEXT World Tournament. Oob is competing, not Goku. Maybe Trunks, Goten, and Pan are also competing. But the point is that you use this tournament to have Oob make it to 2nd place. Someone beats him.

I honestly doubt Toriyama ever had any plans, or ideas about anything for Uub post EoZ.
Also, right now Broly seems like he will be Gokus student; being super prodigy SAIYAN also helps.
That being said, if Uub ever gets some focus, I could see him following Goku around DB multiverse, or something like that.

I imagine Goku would just teach Uub everything he knows. Mostly on Earth, but sometimes on King Kai's planet.
Skipping ahead to when Uub is in his 20-30's, badass, and at his prime could be cool.

Given the revelation that Pure Boo possessed God ki(which means Oob almost certainly does as well), I imagine his potential will be next-level asinine. Won't at all be surprised if his power-creep surpasses the likes of Freeza and Broly, tbh... Especially if you factor in the EoZ chapters. At this point, I don't see Goku being super-excited to fight/train anyone, unless he was confident they could reach(or even surpass) his current level.
And considering that Oob is Goku's first true padawan, I imagine that Goku will indeed impart everything he knows, and Oob, being the highest-order prodigy, will soak it up like a sponge. If DBS were to continue after the EoZ chapters, I would not at all be surprised if we got a "MUI Oob" at some point. I think he could very well be everything Goku is... And more.

I'd like to see something comedic, honestly.
Goku can be as funny and goofy a mentor as Master Roshi was (though definitely not as pervy). So if the writers can come up with some insane training routines that Goku puts Uub through (which are weird because he has no clue how to be a mentor) then maybe it could work out.
