Or recognized Vegeta's value at the end of Boo's arc and say "Vegeta doesn't feel like Vegeta!!"? Or he'd be more closed and reserved to things like these?

Kami remarked on how the evil in Piccolo had largely faded from his heart and conscience even prior to their merger. He may not be quite as approachable but Piccolo was still someone who showed concern for others like Goku. I think his interactions with Vegeta would remain more or less the same.

Piccolo stop being evil after he died from Nappa. He won't be nearly as strong and Kami would have a higher chance on being killed during the Buu saga.

I think he'd try to remain competitive with Goku and Vegeta and build his power to rival theirs. I think he'd want to do so, almost by any means, so he might attempt a few runs in the Room of Spirit and Time. I'm not sure how strong he would get on his own or what training methods he would employ. I have a strong sense that he'd want to explore space on his own, but he no longer has the means thanks to Kami's ship blowing up on Namek. Maybe he'd humble himself and train with King Kai, though maybe not.
As far as his subtle friendship/respect of Vegeta. I see that as being slightly more contentious, since he'd remain more hot-headed like we saw him even during the Frieza and Android arcs. It'd be kind of like they were when Mecha Frieza tried invading, though a little less heated, I think.

Aside of the power gap, I don't think he'd behave in a different way. Slightly different, maybe, but that's it.
Like Lionel pointed out, Kami noticed the evil within Piccolo had mostly faded away, and he's already done several good deeds before becoming one with Kami. Who knows how much input from Nail is responsible for that growth? maybe he was key in Piccolo's evilness fading away so quickly. Although the story pushes Gohan for being the main reason. He just needed to be loved and treated with respect and kindness, he wasn't an irredeemable vampire.
Perhaps Piccolo wouldn't say those things to Geets, not because he wouldn't be willing to carry them on or care about him, but because he'd know the answer coming from someone similar to himself, and prefer to just let him be, just like he prefers to be left alone many times.
Maybe he wouldn't be willing to babysit Gotenks, and being so... ummm nice and lenient with him when he screws up over and over. Maybe he'd be less funny about it, showing more anger towards him. Not that he was being funny on purpose, but the situation might've developed with a more stern Piccolo.
I could see him being a little more standoffish than he is now, but then again he already sorta is that way.

I do think that Piccolo Junior (Sync With Nail) would have been told of the existence of the Hyperbolic Time Chamber by Mister Popo and/or Kami if the last son of Piccolo Daimaō wouldn't have been able to do the Namekian Assimilation with who is basically his father and/or uncle. Which would have resulted in Piccolo Junior (Sync With Nail) far surpassing the canon version of the Demon Prince of Planet Earth's Power Level who had done the Namekian Assimilation with Kami from Piccolo Junior (Sync With Nail) having a year to train with his Multi-Form Clones and/or with someone like Son Gohan and Son Gohan would have been able to far surpass Future Son Gohan in Power Level and achieve Legendary Super Saiyan, Ascended Super Saiyan, and Ultra Super Saiyan from his first Martial Arts Master helping him to achieve the legendary form and then to far surpass it.
If and only if Piccolo Junior (Sync With Nail) and Son Gohan would have given it their absolute all when it would have came to training together in the Hyperbolic Time Chamber for a year, I can really see Piccolo Junior (Sync With Nail) and Son Gohan far surpassing Android 16 in Power Level and becoming able to rival Super Saiyan Vegeta and Super Saiyan Future Trunks that had VERY sparingly trained together in the Hyperbolic Time Chamber for a year and then went on to challenge the evil Semi-Perfect Cell in the Cell Saga.
With a very possible second trip to the Hyperbolic Time Chamber for Piccolo Junior (Sync With Nail) and Son Gohan allowing Piccolo Junior (Sync With Nail) and Son Gohan to far surpass Ascended Super Saiyan Vegeta and Ultra Super Saiyan Future Trunks from the Cell Saga in Power Level and be able to rival Perfect Cell, but only if Piccolo Junior (Sync With Nail) and Son Gohan would have taken their training 100% seriously in the Hyperbolic Time Chamber. Like such as for an example, Piccolo Junior (Sync With Nail) training with his Multi-Form Clones and Son Gohan and Son Gohan going out of his way to achieve Full Power Super Saiyan, Super Saiyan 2, and Full Power Super Saiyan 2.
