If Dragon Ball goes beyond EOZ what would you like to see
Let say Toyotaro goes beyond EOZ, what would you like to see in the new chapter? There are so many possibilities that the chances of it turning out good is high, in my opinion.
I guess I would like to see how the Saiyan such as Gohan, Goten, Trunks, Pan and Bra contribute to the story.
It would be good to see what Oob does with his power, being the reincarnation of Kid Boo who has Dai Kaioshin and South Kaioshin powers.
I would like the anime to follow the manga.

Big, buff, shirtless guys getting beaten up by shirtless feminine twinks (Gokuu needs to abandon his muscle tone all together to defeat his new enemies).
Poop jokes (an enemy that can use psychic powers to make their foe need to use the bathroom mid-battle as a distraction).
More rainbow hair colors (more Super Saiyan forms with hair colors).
And, of course, pronouns.
I wanna see Pan get a rival! I want to see Cell return and become Pan's teacher! More Caulifla and Kale yuri! More yaoi! Green Cheelai x Broli babies who turn into Super Saiyans effortlessly!

There is nothing wrong with muscles, so there shouldn't be any need to lose muscles. Muscles are gained from training hard, that is why they have them.
Cell returning somehow would be cool, maybe they can use the Cell Jrs as a way to get Cell data to come back.
Pan getting a rival that is a good idea.

Goku training Uub, from the perspective of Goku learning how to be a teacher since this would be his first time experience. This story could then tie into one of Piccolo being Pan's teacher and potentially create a mentor Goku vs mentor Piccolo narrative. And finally this could be supplemented with a third story of Uub and Pan and how they feel and deal with their masters expectations.
Dragon Ball was always a kid series and fans should stop being in denial.

Honestly, they really need to do something with Oob to justify him if they go beyond Z. He was the ending to the original manga. GT dropped the ball on him.

No "passing the torch to the next generation" plot beat.
It doesn't work, the past shows us that it doesn't work.
Boruto didn't work, Gohan didn't work, Pan didn't work. People want Goku and Vegeta. Super Hero was a gamble and even then they made an entire B-plot storyline featuring Goku, Vegeta, and Broly.
Just keep Goku and Vegeta as the MCs. It is really, truly, that simple.
That is why I vastly prefer Super to the Cell saga. It doesn't have any arrogant pretence that Goku can ever be replaced.

But you know, for this "Future Trunks Arc" you had to depict Zamasu and Trunks' inner conflict, right? If this was back when I was drawing the manga myself then I doubt if I could have done it. I mean, I'm not very good at depicting the characters' psychology on the page. So this all came together because now I only have to think up the story. [...] On my own, I doubt I would have been able to express Zamasu's fall to the dark side.

I want to see what GT and Boo promised, but failed miserably in delivering.

Nothing in particular.
At this point, I think having any expectations for new Dragon Ball stuff is just setting yourself up for disappointment. A "let's wait and see what we get" approach feels better than hyping yourself up for stuff that has no guarantee (and for some of these ideas, little prospect) of happening.
Just release new stuff and I'll decide then if it's something I want to see.

Honestly I'm fine with anything as long the series doesn't become Super Dragon Ball Heroes 2.0, in summary, fights, fights, fights, transformations, transformations, transformations, lots of characters showing up for fanservice and disappearing out of nowhere, transformations, fights, fights, with a background story that barely exists.
I think Super so far wasn't like that, so I believe it's in good hands.
I was going to say that I don't like the idea of dropping Goku and Vegeta, the new generation will inevitably have the spotlight but I don't think they should replace Goku and Vegeta, for me the younger warriors have to be new allies who will be very important at certain points in the story just as the other specific Z warriors were very important in specific parts of the Z sagas, this happened and yet Goku remained extremely relevant, I want it to be like that, but I'm sure that Toei and Toyotaro have indeed no interest in replacing Goku and Vegeta, so I'm not worried about that.

I think it would be cool if after Z we see Goku become a kid again...perhaps from a wish from a more powerful Shen Long by Pilaf and then he, Pan, and Trunks have to find the 7 dragon balls scattered across the universe because if he doesn't the earth will blow up because....reasons

If you asked me this three months ago, I'd have said that there's still plenty of goofy martial drama to go around. The most obvious thing is a "2nd Tournament of Power", with new forms and characters in the equation, like Broli, Oob, Ultra Ego, Black Freeza, Orange Piccolo, and Beast Gohan. Maybe Beerus has to join the team himself, as well. Do the obligatory "most recent enemy gets humbled and has to team up with Goku against this latest foe"; perhaps for multiple characters, including Beerus and Geran. Have Vegeta vacate the "Goku's main rival spot" so Freeza can finally take up the mantle.
Beyond that, I'm fine with "next generation" shenanigans, but I'd like them to be training under various members of the now-old guard, and having those old rivalries play out vicariously through the kids. Goku's training Oob and Z, and Piccolo's training Pan. Maybe Freeza can train Bra and Vegeta can train Kuriza.
Without Toriyama, though, I'd just like to see some connective tissue added to stuff he's already done beyond EOZ, like Neko Majin and GT('s character designs). Show how Z came to train under Goku alongside Oob. Show Freeza becoming a father. Show why Vegeta is working for Freeza again. Show Vegeta retiring, growing a mustache, and chopping his hair off.
Not sure I'd trust Toyotaro to make it all sufficiently funny, though.

I presume we only saw a fraction of that story, and that Toriyama wasn’t permanently deciding to make DB a high school anime. It wasn’t really any more goofy than the original Hunt for the dragon balls arc.

I love slice of life Dragon Ball! It's one of the reasons I really like some of the simpler fillers like Goku & Piccolo trying to get driver licenses, Goku getting sick, or Goku & Friends going to the amusement park, you have these ultra strong characters facing very casual real life-ish situations, I will be really sad if they stop making these 
The Goten & Trunks superhero Prequel was really fun, I can imagine them doing something similar with Pan, hope they do it in Post-EoZ, it's just something to be fun and a break up from the battles, they don't need to make lots of episodes/chapters of it, it can help the writer(s) to think about the next story.
