Vacuums, pathogens, temperature modification, ect.

There's a plethora of ways that someone could theoretically incapacitate Goku if the knowledge and means existed in the series. I would be curious to see how Goku managed a device's effects like the Active Denial System. A vacuum is only one method.

To be honest, I suspect Toriyama may have not been keeping in mind the physics of Dragon Ball's power model when he wrote for that battle. You could reverse the roles and ask why untransformed Goku was able to survive the first strike against Freeza using 50% of his power instead of being torn apart...

Vegeta is his own person. Ultra Instinct represents the first time that a fighter's mentality is more important than their genetic profile or power level. What is optimal for Goku with happy-go-lucky carefree demeanour won't necessarily be the same for Vegeta.

Gruesome as it may sound, couldn't Moro be subdued via spinal paralysis or a lobotomy? I'm not sure if the Galactic Patrol would be accepting of having to care for a physically and/or mentally impaired inmate but the option is available.
