Unfortunately, I think you're asking for a bit more than what these games actually. They're supposed to emulate mmos. So a lot of what I've seen of the game looks par for the course. At least as far as the Xenoverse games go.

my goto response is: If you think Super is an accurate representation of Goku--you should probably read the original Dragon Ball manga. Because I'm going to assume that you have not read Dragon Ball.

The best thing I can say about GT is that it has a bunch of neat ideas, and I like that it provides a definitive ending for both its characters and the franchise in general.

Went to my local Kinokuniya and picked up a japanese copy of the 30th anniversary Super History Book. Nice hardcover that's jam-packed with interviews as well as an overview of Toriyama media up to that point. Also picked up a Japanese copy of Dragon Ball vol 10.

Dragon Ball Z might have been successful on another channel--I don't know if it would have found the level of success it did on CN/Toonami. I’m not disagreeing with you. I'm just resigned to the notion of when it comes to Dragonball stories, whether in the anime or game, “it is what it is” they won’t ever go beyond fanservice.
