That's not surprising, the man was not even satisfied with what was coming directly from him! (remember how he liked only one drawing of his in the first Art Collection, claiming the rest were failures compared to what he actually had in mind?).
So don't expect him to easily accept even things that are perfectly fine, he's an extreme, ever-unsatisfied perfectionist that can't refrain to come back to his work, that's what he's saying.
He's certainly not saying that Super is bad, he's taking the blame on him.
He complained about the anime back in Z, he'll complain in Super too. Except Super is good enough for him to actually keep an eye on it, when he didn't watch Z at all if I'm not mistaken, even when his kids were. But then again, my memory may be playing tricks on me.
In other words, Toriyama doesn't say Super is bad, Toriyama says he's just annoying and never satisfied, which keeps him coming back to it. And that's good for us.
His sentence is to be interpreted as "I've been like this for a long time, and even now, I nitpick about the new anime when I really shouldn't". Which is why it's being published in the first place, it is not a criticism on anything but himself.

I'm glad that Toriyama is speaking out about the quality but I honestly don't expect it to change. I don't even know what Toei would have to do to improve it at this point. I also believe the quality could be referring to a lot of things. Toriyama has apparently been displeased in the past about things like Toei altering Goku's personality a bit in the anime, so he could be upset about anything. "Quality" is kinda vague.

Well, what else could he be talking about, realistically? So far, the story is more or less the same as in the movies, the art style is the same as in the movies that he has praised for their animation, the voice actors are the same ones he's been praising as well, and I really doubt he is talking about the music. Exactly, as JulieYBM and Wezenheim have both said. That it has at least something to do with the animation might be a safe assumption, but a safe assumption is still an assumption, not a cold hard fact.

Damn, I really didn't expect that! I'm one of those that said in the past that Toriyama probably didn't care much about the series, but god damn, I was wrong! I really apreciate all that he just said, It's good to know that the creator is unsatisfied as we fans of the franchise.

I love Toriyama even more now.

Seriously, I also did not get that impression in the least. He is disappointed with the Dragon Ball Super anime in a way that is comparable to the way he was disappointed with the original Battle of Gods script and DB Evolution; works that he had NOTHING to do with. He's not even saying that just the animation is terrible, he's dislikes it as a product that he did not work on. He just said how he feels overprotective about Dragon Ball these days and that he complained about something vague in the anime. That was it. Anything else is people trying to project their own feelings, really.
