Roshi is very weak for a guy training for over 300 years
It takes Roshi 50 years to master the Kamehameha. It takes normal humans like Krillin and Yamcha to master it within only a short time of training under him.
You would think being alive for 300+ or however many years would make him one of the toughest guys in the planet, but he gets surpassed by fellow normal humans in literally no time flat. How did that happen.
Can you guys imagine what Yamcha would be like after 300 years of training?

Muten Roshi in his prime was arguably stronger than Goku during the 22nd Budokai but he slacked off over the years.
Krillin and Yamcha aren't exactly ordinary either. They had way more potential than Roshi did.

Roshi originated the kamehameha, didn't he? It's much harder to break new ground than to imitate an already perfected method.
The humans are standing on the turtle shelled backs of giants. They would not have made it as far without the foundation and guidance he – or even the Crane Hermit – set for them. Not to mention, in the Dragon Ball universe, you're only as strong as your last foe. They also had the dragon balls to revive them. In Roshi's day, humans didn't really get second and third chances at life. He probably had to pick and choose his battles.

When the series started, Roshi was already an old man. We don't know how strong he was in his prime, and when Goku did travel back in time and met young Roshi, it was a filler episode.

He didn't have the same benefits of his students. He didn't get to train with Kami. He didn't have someone who could teach him the Kamehameha. He was the first we know of to climb Korin's tower. And he was old when we met him.
Goku and the others got to be trained by the only man alive that is confirmed to have trained under Korin, they were able to witness the Kamehameha first hand. They were young and talented. They benefitted from gaining Roshi's experience at a young age and being able to progress faster.

It's not implausible if you look at a few factors. Given the fact it takes him 50 years to fully develop the Kamehameha, ki control is likely non-existent or very, very bare bones meaning he had to spend copious amounts of time figuring stuff out that the later fighters take for granted. There's also a lack of severe training methods available to him like the gravity chamber or ROSAT and no super powerful enemies to keep pushing him to become stronger and stronger.
Roshi also just got old like everyone does and in his old age decided to focus on other things and just slacked off for years on end, both things causing a drop off from whatever his power was at his absolute peak.

Growth of knowledge is exponential. With very, very few exceptions, succeeding generations will progress much more rapidly than proceeding ones. It's the same reason there were thousands of years between bows and guns, hundreds of years between guns and missiles, and decades between missiles and drones.
Each step gets progressively easier and more efficient by building on what's already been done. Jurassic Park makes a big theme of this, if anyone is interested.
For another example, take athletes. Modern athletes don't really work any harder than those of 200 years ago, but if you put whoever the current boxing champion up against the champ of that time, the older guy is going to get wrecked, because the sport has progressed so much.
Each step gets progressively easier and more efficient by building on what's already been done. Jurassic Park makes a big theme of this, if anyone is interested.

Indeed, Dragon Ball Online even supports this idea with humanity learning all about aliens and ki and adopting the "Z-fighter" lifestyle as the norm. Considering that, for many fields, he started from scratch, while his students had the advantage of having the solid foundation of its knowledges , could be credible.
