He's not using the Turtle kanji. He's using his own 悟 (Go).

I was sure Goku was using Kame'sennin kanji
Goku hasn't used the 亀 symbol since the JSAT special OR by manga standards, since training on the ship to Namek

I wish we knew. All we can do right now is hope they'll switch back, as they've taken a step back in developing their outfits towards EOZ. How the Black Arc Should End (by Lightbing!):

Absolute Zamasu(my name for their fusion) wins. He fulfils his utopia and dwells in his loneliness(x amount of time for this to happen). He starts to doubt of his achievements, Goku's body influences him to seek out challenges but there's nothing. Perfection becomes a curse. Absolute Zamasu starts to dread his existence and presents himself to the Omni-King, detailing on his actions.
Using his powers the Omni-King restores everything to the moment before Goku and Vegeta perish, humanity's last barrier. Zamasu concedes. He ask for forgiveness(mainly to Goku, Gowasu and Trunks) and understands that his justice isn't justice at all. He asks for judgement and the Omni-King delivers.
Trunks is forced never to travel in time ever again, all the time-machines are destroyed.

Is that true? His family name is Son, i thought the symbol on his gi was pronounced "Go". I may be wrong though. Son is a different Kanji.

That's correct. It's not his family name, it's just one of the kanji from his name (Son 'Go'ku).
Would have liked their RoF outfits as well especially since it seems they plan on fusing, now we basically have an idea already on how Vegito will look like if they fuse (there is a difference since Vegeta has his saiyan plate armor on)

I'm quite sure we will be disappointed when Vegetto appears again but with his old clothes even though Vegeta's wearing armor and long sleeves and Goku has got the kanji. Unless Vegeta and Goku finally get battle damaged to the point they are completely shirtless and we get shirtless Vegetto

It's not just Goku and Vegeta - they actually took longer to go back than most. Everyone aside from Bulma (and Tenshinhan, oddly) quickly returned to their Battle of Gods outfits, rather than staying with their Revival F designs - and in Bulma's case she technically had a new Toriyama design for this arc, even though it was just an outfit change compared to Revival F.
I kinda considered these as the "official Whis suits" since they have his logo. So I think they will reuse them in the tournament. Till then we are stuck with my favorite Goku outfit. The bog one.
To pimp out different merchandise strictly tied into Super. It's the same reason Future Trunks' hair colour changed from purple to blue.

YES. All of my yes. Vegeta wearing less and less saiyan armor was symbolic of him becoming more and more like an earthling. Feels like a huge backtrack to be back in his Cell arc gear.
