I don't see what the problem is as long as it isn't absurd or ridiculous. Everybody has a different sense of humor, but most people can agree on one basic element of funny. I think the jokes would make the whole thing a little more light-hearted and rewarding. Like sprinkles on ice-cream. You really don't need 'em, and not everybody cares for them... Something that defines the character? Or just a quote from a moment that's generally agreed upon to be important for said character? I don't think either of these are nearly as subjective as humor. But I also don't know how many characters would actually have quotes that fit either of those categories though. Maybe just a quote from the first chapter they appear in?
