TeamFourStar and myself got our accounts back through filing a counter claim. It takes a few weeks or months (2 months for me), and it works minus a video or two.

Is there some secret, actually-helpful User Support section of modern YouTube that I've never stumbled upon?

Anyway, this needs to happen if it hasn't already. Anyone with two neurons to rub together should know that getting your account taken down for posting educational videos is utter baloney. I have no doubt that the Daizex channel would be back up and kicking before long if the proper attention was given to it.

I really wish I could tie a lasso around everyone worthwhile on Youtube and pull them to another video uploading site like Blip.tv or Viddler.
