At least fifteen swords:

1) Yamcha Vs. Goku
2) Goku Vs. Murasaki
3) Didn't Blue use a sword?
4) Goku Vs. Tao Paipai
5) Yajirobe Vs. Cymbal
6) Gohan Vs. T-Rex
7) Yajirobe Vs. Vegeta (And Krillin uses it?)

Trunks Vs. Freeza
9) Trunks Vs. #18
10) Dabura Vs. Gohan
11) Gohan trains with the Z-sword
12) Janemba
13) Tapion's sword... I'm just counting it once.
14) Trunks Vs. #14
15) Didn't one of Garlic Jr's henchmen pull weapons out of his body?

I'm guessing I missed some.

16) Trunks Vs. #17 and #18 in the future.
17) Trunks used his sword against Cell in the future
18) Gokua

When Goku fights Kinkaku & Ginkaku, one of the brothers uses a sword. I believe that was anime only, though.

Still forgetting the one I have in mind, I'm not counting anime filler either.

Might as well give a hint; the character (he) wields a sword in this particular scene, but never actually gets the chance to use it on anyone.

I don't know if that really counts as a sword (I've always thought of it as an arm-blade), but it definitely wasn't filler. He got disqualified from the match because of it, and it's the source of Tenshinhan's chest scar.

Specifically, Shuu holds a hunger-weary Goku at swordpoint as the characters try to escape Pilaf's castle.

Although I believe that's anime-only.
