Why would this happen? The Daizenshuu timeline doesn't say that Goten was born before the Artificial Humans' attack, it was just talking about that specific year in general, then went to the specific days. Chi Chi could perfectly be at her 2-3 months of pregnancy during the Artificial Humans/Cell arcs.
Almost 7 years passed before the Boo saga, and Goten was 7, so...

I always thought 37 could kind of count as middle-age anyway. Or maybe she'd just aged quicker, due to the hardship she'd suffered with Gokuu and Gohan. I can't blame her.

She didn't look middle-aged to me. Aside from the hair, she didn't look that much different from how she did in the proceeded Sagas.
