First off I’d like to say that I don’t remember DB very well (even though I should, maybe I’ll grab the episodes after this and watch it all on one go ) and I didn’t watch the DBGT saga all that well skipping most episodes and running away, scared from the remaining. With this said my favorite battles are:
DBZ – Saiyajin Arc: Goku sanbai kaioken VS Vegeta. This sequence had me on the edge of my sit when I first saw it from the very beginning when Goku destroys that rock where Vegeta was standing, until it ended with a violent punch in Vegeta’s guts. It was amazing, the “camera work” with the panoramic and travelling capturing it all with great speed and yet not losing any detail of it and the music (Japanese, don’t know the English music at all) perfectly with it all. If I had to pick a fight in all DB that would define excellent brutal action I’d pick this one. However as good as it may be it has its flaws, in regards to the animation quality I’d have to say that it lacks a bit at the very beginning and gets awesome afterwards.
DBZ – Namek Arc: Ginyu Tokusentai Recoome VS Vegeta. Another great sequence. In opposition to the one I picked above, the animation quality is stellar, however in DBZ in particular this sequence lacks a somewhat better pace, in DBKai the same fight is really well paced but unfortunately the Japanese voice actor for Recoome isn’t as funny or as good as the original and most of the comedy in it gets lost, which is why this fight is also great.

Nice, I agree those are two of the best fights in the franchise. What is this 'sanbai' though? And one day I'll shove those GT episodes down your throat Lau, you'll see xD
One of my favourites I've said it many times, Jackie Chun vs Goku, 21st Tenkaichi Budokai. I just love how the fights keeps going on and on and on, they blast each other and celebrate early victories, Goku turns Ozaru, Jackie Chun destroys the moon; and then, after they're completely exhausted, the fight is still going on and all that is left is for their raw fighting prowess to shine.
I think Goku vs Vegeta during the Buu Arc is quite good but I haven't watched it in ages so I won't comment on that one.

5. Goku and Piccolo vs. Raditz
It's one of the few simul battles you'll ever find in the series as the "Strongest Combo" go against the Saiyan Raditz. It's also great because of the tension between Goku and his brother thrown into the mix.
4. Goku vs. Piccolo
This one introduced the more over-the-top type of fighting found in DBZ while not deviating away too much from the more grounded style of the first series, which is a fine combination. Not to mention it's fucking brutal.
3. Goku vs. Tenshinhan (rematch)
I like this one the most out of all the Tenkaichi Budokai fights because it showcases how much Goku has grown as a fighter from years ago, and it introduces the Bunshin technique. It's also the last time you'll ever see a human legitimately being a match for a Saiyan.
2. Piccolo vs. #17
This one deserves second place as it's the last time you'll ever see Piccolo in his full glory, and boy is it worth it. Instead of following the typical new power-up automatically equals one-side beat down trend, it's an evenly-matched slugfest (Piccolo's expert use of projectile-based and tactical moves vs. #17's infinite stamina and high speed).
1. Goku vs. Vegeta (first match)
Classic anime/manga rivalry. Goku engaging in battle with the Saiya-jin prince Vegeta, and proving that even the lower-classed can surpass an elite with proper enough nurturing of their abilities. Compelling story to behold.

Goku didn't die in GT. The show sucked him off so much, it was impossible to keep him in the world of the living, so he ascended beyond mortality.

SSj Gotenks vs Super Boo was pretty good. It tried to pay homage to the goofy, early-day Dragon Ball fights, and successfully captured it.
In that category, you can also include the Krillin vs Roshi during the 21st Tenkaichi Budokai.
One of my favorite serious fights is Piccolo vs 17.
I wipe it off the tile, the light is brighter this time, everything is 3D blasphemy.
My eyes are red and gold, the hair is standing straight up, this is not the way I picture me.
I can't control my shakes, how the hell did I get here? Something about this, so very wrong.

5.) Goku vs Frieza: This one is awesome because this is the first time we ever got to see the legendary form of SSJ. The battle was action packed and it was fun to see Goku put Frieza in his place.
4.) FPSSJ Goku vs Perfect Cell: The fight itself was great. The technique that was displayed by both combatants was awesome. This also showed how much of a threat Cell was. I mean if Goku can beat him who can!?
3.) Piccolo vs Android 17: I really like this one because it was so even. Piccolo and 17, whom was previously thought unbeatable, were fighting toe to toe in one of the most action packed fights in the series. This really gave Piccolo a time to shine.
2.) Goku, Gohan, Krillin, and Yajirobe vs Vegeta: This one is a classic and I'm sure a lot of you are surprised this isn't number one. Part of that has to do with the fact that this wasn't a one on one. People had to come in to save the day. However this probably is the most action packed fight in the series and such it deserves the spot in the top 3 for sure.
1.) Majin Vegeta vs SSJ2 Goku: This fight was always awesome to me. The unfinished fight between 2 rivals. The aftermath of their fight also woke up the most deadly villain the series had seen as of yet. Now that is badass. This fight also showed that Vegeta actually did have a heart and it was pretty cool to see .

Since It's fresh in my mind one of my favorites is Yamcha against Kami. I was laughing so hard when I first saw that fight.. And wham when Yamcha hits him with his Sokidan, I was just as surprised as everyone else in the show. Might have been his greatest moment.

I remember watching this match and actually feeling some pain when Zarbon started pounding Vegeta. That's really intense. You can't beat what happens next, either. They need him to get one dragon ball, and he winds up taking them all. Then there's that Kuririn being chased by Vegeta being chased by Zarbon and that classic Bulma thinking an enemy is hot. Vegeta really proves himself here. Zarbon's death was epic and very well-played.
An interviewer asks, "The soundtrack in Sonic 3 has become legendary. Is it true that you worked with Michael Jackson on it?" Takashi Iizuka kills all of our hopes and dreams by replying, "You know, those are just rumors, and SEGA does not want to say anything about them. So they will forever be just rumors..." WHY!?
-Any Tenkaichi Budokai fight was awesome. Except in Z. Especially when Mezase Tenkaichi plays.
-Goku vs Freeza (mainly in Kai to cut down on filler, the reason why I bought Kai part 4)
-SSJ Goku vs Cell (awesome fight to watch)
-SSJ2 Gohan vs Cell (seeing Cell so desperate and helpless is awesome)
-Ultimate Gohan vs Super Boo (If only it were longer)
-Vegetto vs Boohan (Such a joy seeing Vegetto be funny and massacre Boo, Even more one sided then SSJ2 Gohan vs Cell)
Why Dragon Ball Consistency in something such as power levels matter!

Power levels establish tension and drama. People who care about them (well, people who care about them in a narrative) don't care about the big numbers or the fancy explosions. If you have character A who's so much above character B, who's the main character, you're gonna be left wondering how in the hell character B, the character we're supposed to care and root for, is going to escape the situation or overcome the odds. It makes us emotionally invested.
If character B doesn't escape the situation in a believable way that's consistent with previous events, then that emotional investment is gone. The audience is left believing that the author can just create whatever scenarios he wants and what happens to the characters is decided by whatever the author wants to happen, regardless of the events that happened in the story. Which, in fairness, is what happens, but the audience wants to be fooled. The audience wants to know that the world they're following has rules. That the world they're invested in isn't going to bend to external factors that are irrelevant to them.
An author can do whatever he wants with the characters, that's not false. But the author should also have the responsibility to make sure it fits in cohesively with the other events in the narrative he has created.
I was also always a fan of SSj Vegeta vs 19. Vegeta just slaughters him.
