I really think he's just being diplomatic about GT.
He did kinda-sorta defend DBZ live action American movie before later calling it an abomination or whatever insult he used.

"Supervisor" is a big catchword for marketing purposes. That word doesn't mean he's reviewing everything. In fact, that word really doesn't mean anything. Toei could easily produce something totally on their own and then ask Toriyama one random inconsequential question over the telephone and then decide to put his name in the credits as "Supervisor". That's how meaningless that word is.
You can definitely guess from interviews what amount of input Toriyama may have had on the anime and GT, more or less, but you CAN'T guess it just from his credit as a "Supervisor".

All the info from Toriyama himself and other official sources about his involvement with GT pretty much indicates he was only involved in getting things started (picking the name "DBGT", doing the initial character and machine designs, etc), and after that he left the series entirely up to the anime staff.

I know Funimation references several real-world countries in the old dub.
