I agree with the "he used up all his ki" theory. As for why he turned to stone/ash/whatever, I don't think it's meant to show he physically turns to rock. I believe that it's a purely symbolic way of showing Vegeta as lifeless. I do find it odd that Vegeta referred to "blowing [himself] up" however, when that's not what he actually did.

Well when Vegeta was about to blow himself up he seemed to know about it, perhaps he knew about this because it might have been inside every Saiyajin like a last resort, so all of the Saiyajin on the old planet Vegeta knew about it but feared to use it and left it only as a last resort.
Maybe it has something to do with the Saiyajin genetic structure, them being a warrior race so they could die instead of surrendering.
Anyone can blow themselves up, at least if they have sufficient control over their ki. It's not a Saiyan trait. We've seen both a Saibaiman and Chaozu (a human... I guess) do it.

Majin Buu also uses Vegeta's selfdestruct technique against Gohan, but he didn't turn to stone. Though this is probably due to Majin Buu not extering all of his ki.

I highly doubt they wanted you guys to try and figure out why they did it. They probably just liked the idea of him turning to ash since that's what happens when you're cooked overdone.

I mean the look somebody gets when their extremeley ill or have recentley died. I was thinking of Vegeta's eyes going blank and him just dropping with a thud.
Anyway... man I really can't figure out why he turned to stone other than to give us a unique death. When other's have self destructed I geuss they exploded but Vegeta knew of Buu's regenerative powers so he tried to completely vaporize him with a huge blast of all his energy. Of course we know the pink blob is stronger than that.

I always just figured he used up all of his energy and was reduced to nothing but ashes afterwards. It's not the same as what Chaotzu or the Saibamen did. They actually expoded their bodies. Vegeta just generated a massive explosion around himself.

Using up absolutely ALL of one's ki resulting in turning to stone is perfectly logical. You know why? Because it's a cartoon.

didn't explode into a million pieces, because when you go to train with King Kai, your body disappears from the physical realm. Goku's body disappeared, and Piccolo. Assuming Chiaotzu's body did turn to ash/ stone (we didn't know what happened, because everything was shrouded in smoke), it might've simply disappeared- before crumbled into pieces (so he could retain his body).
The only place Vegeta was headin' was HFIL, so we got to see what happens when a bad guy self-destructs up (by releasing all of his ki).
Or maybe, the technique differed from Chiaotzu's.
But, in the end, I think it was purely symbolic (like what Swift said). It made things more dramatic and showed a noble death- although in vain.

Anyway, when Piccolo did that explosion in the 23rd tournament and when (Fat) Buu exploded in front of Vegeta, their bodies were intact, weren't they?

Well in the case of those two (just FYI Vegeta did it too in the Saiyan saga), I don't think they released enough ki to put themselves in danger of dying.
