It's simply inconsistent and that's what's being pointed out, not anything else.

Tho when I think about it, the reason for that was probably since the start of Buu arc Goku has been way too relaxed and sometimes overconfident of his abilites unlike early DB, so Akira Toriyama probably wanted to make Goku look like he will learn from that and takes his fights seriously next time (if there is a next time)Doctor. wrote:

These shots look really awkward. Eye-level shots convey a sense of the ordinary. They also make the characters look flat, like drawings rather than real people with three dimensional forms. It really takes me out of the emotion of the scene.

I wouldn't compare a bullet or an axe to Sorbet's ring. His ring is far more powerful than any conventional weapon should be; Goku really doesn't need to keep his guard up for something that powerful when he's not expecting anything.
I agree that it's somewhat inconsistent with the manga, but I don't mind that much.

I think these might be cropped from how they appear in the actual film but granted, the filmmaking is pretty average in general. The script does appear to be good, though. The dialogue definitely seems to be Toriyama all the way. It's just a shame he didn't have a good director to fill in the gaps.

Saying that there's no point in complaining just because there's a lot of inconsistencies is a bad argument. The next movie could be filled with plot holes, contradictions and bad writing and then you wouldn't complain just because DB is already filled with that kind of stuff?
