Goku saving the world on May 9

With 5 being "go" and 9 "ku" in Japanese, is it a coincidence in-universe that Goku becomes Earth's hero for the first time on this date? Or did some "mysterious forces" intend it to happen so? Could Baba have something to do with it...?

Either it's a coincidence, or Toriyama intended that. I really doubt there is any in-universe explanation for this.

The use of the date "May 9th" in the series is definitely an intentional joke on Toriyama's part.

In the possibility that it's not a surprising coincidence, the first thing that comes to mind is Baba, because she foresaw the day this will happen. Maybe like most abilities to see the future she is able to see more possible or plausible variations of it, and then acted a bit behind the scenes to ensure this will occur, while in the process arranging it so that it falls on this date as well, as a joke (like Toriyama). And to make the event more cooler.

King Piccolo, it was May 9th in the Japanese version and the 13th in the English dub. This thread is referring the original Japanese.

Japan was going for a go/ku (5/9) pun, and I'm assuming Funimation wanted to use 13 because of it traditionally being a superstitious/unlucky number.
