I agree with all your points. This is the better route to take then trying to jump around the movies like tent poles. I like to think of the movies as visions of what was to come, kind of like Beerus's dream of the Super Saiyan God. You want to ship new products, not rehashed old ones.
You can't begin after Revival of F as that hasn't had a home release. You'd be confusing and turning off a portion of your audience who never got to see the film in theatres. That's far from a smart move.
Simply starting fresh and building up a new narrative based on these pre-established movie elements seems like the smartest move for everyone. Your TV audience is clued in, you're not locked into the writing decisions of 90 minute movies, and you've got a continuous TV series to push for home release.
Without a doubt, it would have been far simpler to begin after the end of the original series, but it seems clear that Toriyama doesn't want to touch that. He's content with his ending, and I think that's absolutely fine. The more I think about it, the more I'm happy that Toei seem to be approaching it from this angle.
Sure, it might suck to see the films that were marketed 'as if the manga were still in serialisation' ousted in place of this, but it's probably for the best.

I do like the idea of being able to have them do a better paced version of BOG. And just having a better director at the wheel this time makes it seem like it could be a real treat. I think I'm good with this.

I'll be sad that the new films are being tossed to the wayside if they are really remaking them for the TV audience, but I never had a problem with that option. I do question though, that if we're really starting fresh, what all will be changing? Stuff like whether Super's version of Battle of Gods still take place in AGE 778, or is it being shifted back closer to Buu's defeat on the timeline to make more room for future stories (and for Goten and Trunks to stay kids)?

No it hasn't been confirmed. That's just what people are speculating. I could see them retelling BOG and glossing over it's main fight and plot points with Beerus to get the gist of the story out there while focusing most of its energy on what happens next. Why gloss over? Because you can watch the movie for an in depth version of the events. All they need to hit on is Beerus comes to Bulma's party and upsets everyone and Goku fights him after Vegeta and the rest. You could probably do that in like 2-3 episodes. Then we find out what happened after that and the new character Champagne comes into play which is the real focus of the series. He looks more vulgar and like a bully to me. I take it he will probably be Beerus' rival.
