Whose backstory do you want to know the most?
There are characters in Dragon Ball who show up out of the blue quite a lot, sometimes we do get to know what their life was like before they appear in the manga but there are a lot of characters who haven't had their full backstory revealed, but who would you like to know about the most?
I personally would want to know about what Yamcha was doing before he became a desert bandit, was he born in the desert? How did he and Puar become friends?

Definitely Yamcha and Chi-Chi... but Toriyama dislikes both of them so that's likely not gonna happen.

Freeza. Seriously, his backstory is a goldmine considering how much of an effect he has had on the universe and who he's comes across. BOG, DB- and ROF only made things even spicier. He knows about Beerus, the Super Saiyan God and Majin Boo and the potential of his race reaches a level beyond Super Saiyan God. And that's not even covering the origins of the Planet Trade Organisation and the rise of Freeza's army. There so much you could do with Freeza's background.

Beerus and Whis. They're the most mysterious characters in the series so far, especially Whis, whose entire existence is a complete mystery to any of us. It has been implied that Beerus wasn't born that strong, so I want to know how Whis trained him.

Why would a king be elected though? In his office you can see portraits of the previous kings and they're all dogs.

If they start going into everyone's back stories then we'll have another Naruto,Fairy Tail or One Piece on our hands that ruins the flow of current events and slows everything down for no reason.
When an episode ends on an epic cliff hanger like ep7 of Super,the last thing I want is for them to waste the next 5 or more episodes on someone's back story that has no effect on what's currently going on.

Lunch, Red, and Black. Lunch because of reasons, but Red and Black? How did those two kooky characters wind up together? Was Black legitimate at one point; maybe did security for a private company and had a sweet resumé? What did Red see in him that made him qualified for the Staff Officer position? How did Red gain Black's respect as a would-be dictator before the reveal of his ultimate wish swept it away? Was it simply a job for Black that paid handsomely? But if it was just for money, why would be care or so appalled that the RRA only exists to make a short man tall? I'm thinking Black's heart broke that day, you guys. The ruthless tyrant he thought he was serving showed his true colors(oh my god) and he took matters into his own hands.

I think the better question here is why everyone in the Red Ribbon is named after colors. Are they codenames or did Red specifically chose people with names like that? Definitely Beerus and Whis. I want to know what Beerus was, like was he born to be the God of destruction or was he just freakishly strong? How was he born, from the Kaiju, or just a normal birth?. I'd like to know the same thing for Whis. Also, how did the two meet each other, was it set up before hand that he will train the Gods of destruction in universe 7? There's so much to find out about the two of them.

3. Original Super Saiyan God, and the war between good and bad saiyans - Why not? This story has the potential to build an entire world, culture, and cast. The scale is big.
2. Dr. Gero and the RRA - This is a backstory that has the potential to be as dark as History of Trunks, and I welcome that.
1. King Cold and his clan - Cause he's the coldest mother****er in the universe. But seriously, disregard Chilled's existence. This guy is arguably one of the most significant figures in the series. He's the father of Frieza, the secret leader of this giant intergalactic organization, and he's lived long enough to know about Beerus and Buu. Yet... he only got a few episodes of screen time before being easily dispatched? I will never, ever understand the point of introducing this guy if they were just going to kill him off so quickly. They could have easily had Frieza arrive with a super strong henchman instead...
Honorable mention:
Whis - If it was up to me, I'd reveal this guy to be one of the most important figures in the multiverse. However, as part of modern DB, his entire backstory will likely be gags galore and unrelated to anything significant. As it stands, he already has a female counterpart, which is disappointing, imo.
