Chi-Chi is one of my favorite characters. Her contributions to the story were subtle, but vital. If Gohan was a true warrior who aspired to gain power and continued training just like everybody wants, he would just be a Goku clone. There would be literally nothing separating the two, they already have identical moralities and attitudes, giving them identical personalities as well would have just solidified Gohan as pointless.
As an example, Goku and Gohan have the same attitude. They are bright and cheerful and innocent and friendly and sweet. Meanwhile Goku and Vegeta have the same personality. They are warriors who love to battle and want to grow stronger.
However since Gohan does not possess the same personality, and Vegeta does not possess the same attitude, the three of them manage to be completely unique characters despite sharing many common traits.
And in Gohan's case, this is all thanks to Chi-Chi's influence. Imagine if Gohan were raised solely by Goku, we can even throw Bulma in there as the mother as many have suggested and nothing changes. Goku has a much stronger personality than Bulma, so Gohan would end up picking up Goku's traits. The few personality traits that define Bulma so strongly, like her selfishness and spoiledness, are incompatible with Gohan's core nature that he was born with, so he would not pick them up anyway. At best Gohan would inherit Bulma's intelligence, so we would get a Goku who still talks like a hick and trains all day but can also build a spaceship or something for comic relief.
Chi-Chi was vital because her personality is just as strong as Goku's, meaning the traits that she pushed on Gohan of intellect, properness and manners, and a focus on family life impacted him. And I don't know about some people, but I LOVE the Gohan we have now. I just wish there was MORE of him. He is such a freaking dork, but with the pure heart of Goku. How is he not lovable? Why do some people want Gohan to be a fighting badass who loves to train? The last time he was like that, against Super Boo, he was completely generic. The nerd Gohan is someone unique, and it's all thanks to Chi-Chi. And since she instilled in him the value of family life, we get those badass scenes where Gohan powers up in a rage to protect his family. I REALLY want him to do something badass to protect Videl at least once in Super, kind of like how when Beerus was out of control and beating everyone up, Gohan just put on his serious face, handed Videl his glasses, and flew up there to handle things... The only difference is I don't want him to get his ass kicked next time.
Now Chi-Chi on her own, I find infinitely entertaining. On the surface she is a perfect housewife who loves to cook and clean and smile and take care of her boys. If it ended there she would be generic, but then since she has to deal with freakin Goku all day, we find out that underneath the proper housewife she's actually completely crazy! Rather than call her "bitchy" like some people, I would call her fiery. She has a will that can go toe-to-toe with her husband's, and that's saying a lot. I just find her scenes to be hilarious, like the filler where she demands Dr. Briefs make another spaceship, and she suits up all badass and takes Master Roshi and Oolong with her and plans to go to Namek to save Gohan. She's just a housewife, so when you give her a will that strong, she becomes a badass. But it's simultaneously hilarious because she really expects to stand up to Freeza and everyone else.
And most importantly of all, Chi-Chi is by far the hottest character in the show. And I don't mean young Chi-Chi like most would assume, I'm talking about Boo arc Chi-Chi where she had that milf thing going on, MMF... Uh, but I suppose that's a little off topic. Anyway I adore Chi-Chi, her personality isn't annoying to me, it's entertaining and badass. You want a strong, independent female character, look no further than the woman who's stubbornness and fearlessness can match Son Goku. In the words of Master Roshi, "he's not coming back because he's afraid of the one thing stronger than a Super Saiyan; his wife!"
