This sounds like one of those exaggerations again. Chi Chi is barely in the series relevance outside the arc openings or endings and Filler.
Yet shes not given any on screen time to form an aspect of when she is comfortable with her life to show the side of her that exists when she isn't yelling at Goku. My problem with her is that Bulma, is often given a wider importance to her role outside of being Trunks' mom in how she contributes. Chi-Chi's just the wife-on-the-side with no qualities about her besides that one-dimensional gag. Though, yes the series would be better if that gag ended with her and Chi Chi wasn't so flanderized (because thats the real reason she's seen so negatively.) outside of that stereotypical housewife box. Even Marge Simpson, in a similar relationship condition has a wider range of an independent, individualized personality traits than what Chi Chi is given. Chi Chi is just written to be the antithesis of Goku.

If she didn't exist, where would Gohan and Goten come from? Goku knock boots with Bulma? Also she has a great voice. (Admit I'm a little bias as Cynthia Cranz is rather friendly).

Chichi isn't an amazing character, but she does have very good qualities to her. She's really the perfect wife for Goku when you think about it, and thus made the series better for it. ChiChi thought she was following the appropriate steps for marriage but ended up doing it in the most unconventional way possible with the most unconventional guy possible. It's kinda ironic when you think about it.
Like I said before, Goku's purity led to him accepting marriage even though he doesn't have any romantic feelings for ChiChi and women in general. It took an unconventional guy like Goku, who goes against the idealogical pure hearted person, to court someone like ChiChi who attempted to follow the idealogical steps for marriage but by marrying Goku did the opposite due to not being very bright similar to how Goku misunderstood marriage by not being very bright himself.
Also, her quest to be the ideological mother also helped moulded Gohan to be the way he is, and that's a big plus. She also helped trained Goten which is pretty cool, and her leniency towards Goten really showcased how Goku's death affected her.
The fillers were tolerable for me, some of them were even enjoyable like Kaioken ChiChi and gung-ho ChiChi. I also liked the post-Dragon Ball fillers with her because it was the only time Goku and Chi Chi had an adventure together.
Also, on a side note, am I the only one thinks Buu saga Chi Chi is the best looking Chi Chi?

No. Like her or not, she does play some kind of role in the series. If Toriyama hated her that much, there would be no Chi Chi. I must be one of the few people who actually likes her.

Chi Chi is an Asian Tiger Mom. You should look it up, plenty of Asian parents act just like her with their kids. Obviously in DBZ its played more for comedy because Gohan goes out to fight to save the world.

Anyway, to me, she was never that annoying. I actually liked most of her filler scenes in Z. They were funny to me, now they aren't (partially due to how annoying her voice has become).
As much as I despise Chi-Chi in Super, I wouldn't go as far as to wish she didn't exit.
